I started using very inexpensive Chinese knives shortly after Nixon went to China and they opened their doors to the West, so I have some experience. I've also become accustomed to European-style cooking knives over the years. Each type has its points, but if you want to got an excellent knife with very forgiving (if not completely stainless) steel, a good edge, very reasonable balance, all at a VERY good price and value, here's a great choice. What they say about the tapered edge is really true, learning to use this knife is extremely easy while cutting quickly and using the crab technique to keep your fingers out of the way, it does not rust NEARLY as quickly after use as the Chinese knives I bought waaay back when, and keeping the edge sharp with a high-grade butcher's steel (do NOT even consider using a lousy one--you risk ruining a really good factory edge) is ridiculously easy. It also is an excellent substitute for any of a handful of specialized kitchen tools you'll never have to find, use, or wash again, but you can figure out which ones for yourself.
I like this knife a lot, easy to cut onions and meat with, even cheese. I did however find the finish a bit lacking, the item I got had many imperfections and scratches right out of the packaging, I would have liked it to be a little better than that, but it's only cosmetic and does not effect the knife performance. I don't doubt this is a wonderful knife for many people. Unfortunately, I'm not one of them. I find the weight of the blade cumbersome to control and tiring to use for longish periods of time. It chops, dices, and slices well, but no better than my French chef's knife or Santoku knife. Perhaps if I had used this type of knife earlier in my cooking life, I would be more comfortable with it.In fairness, this knife is well-made and very reasonably priced. It does what it purports to do and for many people, I'm sure this is an outstanding addition to their kitchen. It just doesn't work for me.
This vegetable slicer is listed in product dimensions as 4.53 oz so I was expecting a thin blade, but its thick and weighs over 12.5 oz so back it went. The surface on one side had many machine scratches, and the logo was etched crookedly. The handle seems a bit small. It was sharp, but had a rough cut edge. Spend a bit more and get a lighter knife if you are considering getting into the Chinese chef knife world.
Great knife this is now the second one I have bought as I gifted the first one to a new cook in my kitchen.Durable, well built and so multi-purpose I don't know why I didn't fall in love sooner.
The blade is thicker than I like. I returned and bought a Lampson.
