The blade does show the edge holding ability of a superior steel. It remains sharper than another knife of stamped Japanese steel, when both are honed together. The handle is comfortable. Excellent value at its sale price.
Exactly what I wanted. Very sharp and makes trimming fat very easy.
Haven't used to skin a deer yet due to out of season, but used to separate a deer roast and trim silver skin. Worked better than the big box store knives I have been buying. I also like the handle.
I’ve used a six inch stif curved blade all my life This brisket knife has extra wider blade at the tip. I like this knife because it has a wider end as opposed to a dagger tip

I just recently used this product over the weekend. I used it to cut up a whole chicken. I was impressed how easy the knife glide while cutting. My pieces came out neat and did not look like they were mangled. I love how easy I was able to cut the meat from the bones when I did the breast of the chicken so that I was able to cut them in half in order to have more pieces.
Got these hoping it would make food prep easier and it does. Makes cutting meat super easy and is sharp as well. Worth the purchase for sure
