Beautiful pan that bakes good bread

I really wanted a 4-quart Dutch oven for baking sourdough and artisan bread. This one is great so far! I've used it to make several loaves of bread, both sourdough and the 18-hour "artisan" recipes with regular yeast. The blue color is absolutely beautiful and true to the photos on Amazon, and it bakes the bread very well. I also really like the curved handles that make it easy to take the lid off with hotpads when it's time to let the top of the bread brown for a few minutes at the end of baking.This size works best for bread recipes that use about 3-4 cups of flour. It's not big enough for larger loaves--you will want a 5 or 6 quart Dutch oven for larger ones. I wanted a smaller one like this so that the 3-cup loaf recipes would have better rise/oven spring since there isn't the room all around the sides for the bread to spread out and stay flat like my 5-quart round Dutch oven has.I always use a piece of parchment paper under my bread, so clean up is very easy and quick. So far the enameled inside of the pan has stayed clean and stain-free.

This oven is your best friend when it comes to bread!

This is a very nice Dutch oven. The lid creates a good seal so the "oven" effect is legit. If you are not used to cast iron dutch ovens, start out by checking on your loave about 10 minutes early as you may need to tweak your oven temp. I would highly recommend using an instant read thermometer. Now for the second best part (the first being the bread) ..., enameled cookware is extremely easy to clean.

A well made loaf pan for the money. Good for more than baking bread.

I am 79 years old and have a lot of experience in baking bread. I have kept sour dough starters that I found used more flour for maintenance than I used for baking my breads. So, I no longer use a sour dough starter. I also have milled whole grains to make breads using long fermentation methods producing loaves that, in my opinion, tasted better than those that used sour dough starters. Baking great bread is really a science, allowing autolyze, long fermentation, allowing correct times for multiple raises, and providing humidity for oven spring. I have multiple bread bakers in this shape with different characteristics and different purposes.This cast iron bread baker is cast iron, so it is heavy as most cast iron is, and it is enameled inside and out. Since this baker is enameled on the inside, it keeps moisture from the bread inside the dome, but does not absorb moisture from the bread. For bread, this will produce a great oven spring, but the crust will be softer. A crisper crust can be achieved by removing the cover for the last 10-15 minutes of baking. This method of maintaining moisture for oven spring is preferable and less messy than spritzing the oven sides every 7 minutes for 15 minutes or having a pan of water in the oven. Loaf bakers that have in unglazed interior will produce a crispier crust. So, for baking bread, I prefer the unglazed interior for a crispier crust and use parchment paper to prevent sticking - especially for wet doughs.The plusses of having the interior enameled is that the baker is easier to clean, and with oiling of the interior is less likely to have the bread stick to the pan. When the interior is not enameled, it takes time to condition the interior to produce the nonstick qualities. Another plus of the enameled interior is that this Dutch oven can be used to make other dishes, such as meat loaf, that wouldn't work well in a oven that was not enameled.Whether the interior is enameled or not, this type of loaf pan has different purposes and produces different results. Both are very useful for the intended purposes. I should also mention that I have similar loaf pans in the higher priced brands and this product is comparable in quality. So, I believe it is a great value for the money.I hope this review was helpful for you.

Nice size but problem handles

Nice dutch oven for bread making. The only draw back is the handles. They sit right above each other on the base and cover. This makes removing the top portion (lid) difficult as the potholder along with one's fingers are hard to wedge between the upper and lower handles. It would work much better if the top handles were offset a bit to allow for ease of removing the lid to check bread. Replacing the lid if the bread needs more time is horribly difficult. Other than this issue the bread oven is nice. I usually bake a smaller loaf as shown in the photo. I like that I have the option to also bake a larger loaf in this bread oven.
