Much faster and easier than basic manual sharpeners
I have always sharpened my knives, scissors, and axes by hand. I decided to try out this electric sharpener to see if it was efficient and effective.My experience is that this electric sharpener is easy to use and puts a nice edge on standard kitchen knives when you follow the included instructions. It is definitely better than the typical manual pull-through sharpener due to its consistency and power. The edge that is produced varies depending on how much time you put into it and the blade itself; this is the same as using whetstones, although I think you can get a better, thinner, and cleaner edge from a good whetstone sharpening.I experimented on an old grocery store santoku first. I used the recommended 5 alternating swipes on coarse, three alternating swipes on fine, and three alternating swipes on polish. I ended up with an edge that was better than the one that existed when I bought the knife.I then sharpened a twenty year old Wüsthof santoku and similarly aged J.A. Henckels cleaver. I used the same 5-3-3 alternating swipes and got good results on both. Not quite back to their original sharpness, but good enough for my kitchen for sure. I tested the sharpness on limes and paper and was able to get super thin and easy slices.You can see in the cleaver photo how far up the blade the sharpening wheels extended - almost exactly half an inch per my calipers (.48”).Overall, I am pleased with the performance and efficiency of the electric sharpener. Definitely a keeper in my opinion.

Noticeable Improvement with a Small Learning Curve
I recently tried this Electric Knife Sharpener and overall I’m impressed, even though there was a bit of a learning curve. It definitely took me several tries to get the hang of using it correctly. On my first attempt, the sharpness along the blade wasn’t completely consistent, and some areas were sharper than others. I can see that with continued use and better technique, I’ll likely get more even results across the entire knife blade.That said, even with the uneven sharpness on the first try, there was a noticeable improvement. Great when you don't have time for the whetstone for Western style knives
I typically use a whetstone to sharpen my knives, but using a whetstone is a very time consuming process. I got this electric sharpener for those times where I don't have the time or patience to use a whetstone. So compared to the 30 minutes it usually takes me with a whetstone, this electric sharpener can get a knife sharp in a minute or two. It does not leave the smoothest edge like a whetstone does, but it does work well at providing a significantly sharper knife. Using this sharpener is pretty much self explanatory with the labels on the device. You move from the "coarse" grooves to sharpen both sides of the knife, to the "fine" grooves, and then to the "polish" grooves. I'm able to get a knife to cut through paper like a razor with just a single pass through all of the grooves to get a super sharp knife. Note that this sharpener is designed for Western style knives, where 20 degrees is standard. The sharpener is set at 20 degrees. I would not use this on a Japanese style knife were the standard is 15 degrees, because you'll end up ruining that style of knife.
