i sometimes feel that i could get by with just two knives: a cleaver and a paring knife. this could be the paring knife. passes the apple test. it can core, peel and slice the apple. i am surprised how many paring knives fail that test. nice steel. i put it through the ringer and cut plastic ties with it. edge held up well. then i honed it on a whetstones in a few minutes. the handle is the best. great feel, shape and look. the seams are perfect with the blade. i have never seen such a perfect seal. great shape for a paring knife, with point and not too wide. good stainless steel that holds a sharp edge and is easy to sharpen. pleasure to hold and use. great for eating fruit. i love the handle. too bad they don't make a matching cleaver. this one is sharp enough to pass the apple test. i went to the manufacturer site and got a few more items that were seconds. their seconds are better than shun's firsts.

Not as good as my other bread knives
the handle is handsome (great selling point) but too heavy for me. It does not cut my home made bread as smoothly as my other two bread knives, a Dexter and a Mac Superior. It does cut bread, however, but not worth the price at all.Although a Factory Second, I did not find any scratch or nick or other evidence of this.Waited too long to return for refund and will gift it to someone who might not have another bread knife for comparison.

It is indeed very comfortable to use for hours on end
I purchased this because I wanted an off set bread slicer. It is indeed very comfortable to use for hours on end. I mostly have lent it out in my kitchen to those who make a lot of sandwiches on harder breads like ciabatta . The blade looks like it is designed for slicing baguette when compared to my German bread knives. As a sandwich knife (maybe not its intended design) it is just o.k. as it sometimes pulls some of the ingredients out of the bread on the pull. For use as a bread knife (especially baguette) it leaves a lot of saw dust and tears rather than slices. The blade is scalloped so if you go slowly, it works rather well. The crafting and design is beautiful but it takes a bit of finesse to use so I rate it at 3 stars. I really like the feel of it and want to like it more but it is second to my other bread knife that I use when I need to work quickly. It's probably unorthodox to mention, but since it's no longer available for sale new, it is a Wusthof 8" bread knife that I've had for 21 years.
