Well balanced, heavy duty and sharp. Easy cap removal of 8 bone prime rib. Removal of bones in two passes. Cut steak pieces in one pass each just to see if I could! I grabbed it again for quartering a large watermelon with ease! So far I love it. Delivery was as good as the knife. It looks nice too, nice enough to gift.

This knife is listed as right-handed, but the handle/grip is molded for a LEFT hand. The ergonomic handle has finger grooves/indentations you’re supposed to slip your fingers into for control, but the grooves line up with your left hand’s fingers, not your right. If you try to use it right-handed, your fingers don’t sit naturally in the grip and it feels awkward—like you’re fighting the handle instead of the knife.The blade itself seems sturdy and the length is great for carving turkey or slicing brisket, and I like the idea of the Granton dimples for smoother slicing. But the whole point of a shaped “ergonomic” handle is comfort and control, and this one misses the mark for right-handed use because it’s literally shaped for the opposite hand.If you’re left-handed, this could be a great fit. If you’re right-handed, I’d skip it unless the listing gets corrected or you can confirm you’re actually receiving a true right-hand handle.
The EverGrip 10-inch carving knife is very sharp right out of the box, which makes slicing brisket, turkey, or fish really easy. It’s lightweight, so I wouldn’t rely on it for heavy-duty butchering, but for carving and general kitchen use it works well. The ergonomic handle is comfortable, and the blade feels precise for clean cuts.
