My new favorite knife
I love this knife. The tip shape is great for detail work and the slight curve is great for slicing. The handle, while a little short, tapers to fit nicely in your hand with a pinch grip. I’ve been using it almost daily at work for over a month and still love it. It’s gorgeous too. I would definitely recommend this knife.Please be aware that the handle is unfinished and needs to be oiled and waxed.

Very sharp, easy to handle knife.
This knife has an amazing edge. I can cut up an onion in about half the time with this than with my other dull kitchen knife. The handle is very comfortable and the blade is long enough for carving about any size meat. It makes short work of my vegetables for cook prep and I haven't found anything that it won't cut well. It looks great in my butcher block.

Beautifully crafted knife.
This is a great knife! I've worked in professional settings and am picky about the knives I use and so I kind of got excited when I found this knife on Amazon. It has all the qualities you look for in a good knife. The weight is lighter than most of my other knifes in this style making it feel more agile. The handle is beautifully crafted and is shaped so as to provide a very comfortable grip. They report that the blade is 58 HRC (Rockwell Hardness Scale) and I can confirm that it lives up to the claim with excellent edge retention and durability. If you're looking for a great knife mad by a company with a long history of making great knives (company founded in 1778) look no further.

Sharp, Unique, But Not Favorite...
This knife is no joke in terms of size. The blade is massive (though it is true to the product specs, the unique design makes it feel even larger than it is). Like other high quality steel knives, you need to treat it well and sharpen it regularly. This knife should last a lifetime if maintained. It passes all of the high-quality knife tests, but it falls short for me with its design. The handle is kind of unattractive and the shape of the blade is just odd. For the price, it kind of falls short of the mark.

Comes Razor Sharp
This F.Dick Vivum chef knife arrived Scary Sharp™ straight from the factory. The blade has decent flex, without being wobbly or brittle. The beautiful birch wood handle is sanded and shaped, but is not sealed. I have 2 cautions for those not used to higher end kitchen knives: First, I would highly recommend a few coats of your favorite food-safe oil on the handle before using. Second, this knife is NOT dishwasher safe. You will need to hand wash this knife, and sometimes re-treat the handle - this is NOT a fault or defect. If you take care of this knife, it will probably outlast you. If you are in the market for a more professional grade knife, but at an economical price, I would highly recommend you check out the Vivum line from F.Dick.

Incredibly sharp
Be very careful when opening this and when using it. I feel like it would cut through hardwood like butter its that sharp. I tested it on a tomato and I can make almost deli meat level slices.
