Mixed feelings after 2 months of use

The knife looks gorgeous and out-of-the-box it would have been 5 star review without any doubt. But I decided to use it for a while before making any claims. On the pictures attached you can see how it looks like after two months of heavy use. It surprised me because initially I was expecting the handle to be the issue and the blade to be perfect but it turned out to be the opposite. Handle: from the box it was shiny and extremely hard, it actually looked and felt like a hard plastic and I was concerned it become slippery during use. In reality it was loosing its shiny plastic look becoming more and more wood like and most importantly becoming more and more comfortable in your hand. Blade: looks amazing and I had high expectations about its performance knowing that it is a 'boning knife'. After 2 months you can see that it has some tiny dents and the point is definitely bent that had never happened with my other boning knives - I'm a bit disappointed about that. Overall, it's not a bad tool and will do the job, maybe I just expected too much from the look.

This is a large boning knife, very thin and flexible.

My old boning knife, which I love, is getting soooo thin and worn; I use it constantly, for general cutting in addition to boning--which I do a lot of. I knew I needed a new one. I saw this 7" carbon steel knife with a lovely wooden handle, and ordered. The price was reasonable, and I do feel I found a bargain! The knife is longer than I am used to, not by much, but there is still a little learning curve. The knife tip, the last fourth of the knife, is quite flexible and very thin--which is what I want. I bone a LOT of chicken and other meats, and a flexible and thin tip facilitates the job and makes it much easier. The less flexible part of the knife offers stability. The grip is comfortable for my hand. I am a small woman, but Hubby finds it comfortable and easy to use too, in his big, ape-like hand. LOL! The handle is well fixed to the knife, with no room for debris and bacteria to accumulate, so it is very easy to clean. This is a very useful and functional knife, and I am delighted with it. Carbon steel stays sharp as long as it is cared for, and is easy to sharpen. I can recommend this lovely knife with no hesitation. It would also make a great gift for anyone who spends time in the kitchen and bones various meats. This knife gets around even the tiniest little bones easily and safely.

I love a good knife. I was excited to get this beauty. And it is beautiful, the packaging, the blade and the handle.When I see 'filet' I automatically think fish. This would not be the best knife for delicate fish as the blade is too strong and thick.I used it to cut up a whole chicken. it was perfect. Normally I would switch between kitchen shears and 2 different knives but this one did the job perfectly. The blade is the perfect size and I love the really sharp pointI have also used it to trim various cuts of beef and it works like a charm. I can also testify that it is very sharp. Be careful!If I were comparing this knife to some of my other high end knives it would probably be 4 stars. But comparing this to the description and the price it is definitely 5 stars.
