Handles well, versatile blade
I own a lot of knifes but never had this style or a Damascus steel one.Did a little research before deciding to go for the Santoku as it is the standard knife in a Japanese household.I really like the shape and dimensions of the blade. The knife is also quite light weight.I was a little skeptical because of the relatively cheap price for Damascus steel and after reading that there are lots of fakes out there: comparing the blade patterns of the one I received to the picture of the product online, it is definitely different so not etched on.The knife arrived very sharp, slices and dices beautifully. However after using it for a few days on a bamboo cutting board, it could use some sharpening. I think the bamboo is just too hard. At home ( took the knife with me on vacation, the box is very convenient for transport by the way ), I use a cutting board made of softer wood.The only slight negative for me is the look of the handle. I usually prefer simpler looking designs.But it fits nicely in the hand. Good grip! So that wouldn’t be a deal breaker.A pairing knife and a Santoku and you’re good to go.
