Findking Eternity series 12" brisket knife
The knife came in a nice box with a velvet-flocked foam cutout and a magnetic closure -nice touch. It arrived razor sharp as any decent knife should. The Damascus pattern on the blade iss beautiful and the hammered dimples only add to the attractiveness. What drew me to this knife was actually not its attractiveness, but the fact that 2/3 of the vertical surface of the blade is dimpled which should make for excellent food release -an important consideration when slicing brisket. The other feature I was looking for was the octagonal wa-style handle, which very few brisket knives have.Several reviews complained about two things out of what I feel to be ignorance: the octagonal wa handle and the lightness of the blade. . .The handle: I actually prefer the octagonal wa handle as I not only find them to be comfortable but easier to articulate precisely than a rounded western-style ergo handle.The blade: This is a Japanese-style knife. They are supposed to be light. The steel is much, much harder than German steel and thus less mass is needed in the blade to maintain its shape and rigidity, yet they are not fragile despite their light weight. A thinner, lighter blade is preferable to a thick heavy Wusthoff as you can articulate the blade more easily, more precisely, with less fatigue. As the blade is extremely hard (62 rockwell), it will need to be sharpened far less often than its German steel counterparts.The blade appeared to be bent, as it was not in-line with the handle, but as the entire 12" length of the exposed blade was perfectly flat, so I think it is far more likely that the blade and tang were not bent at all, but that the injection molded wa handle was simply molded off-axis onto the blade (these are mass-produced in China which is why it is $70 instead of $300). I sent it back and Amazon sent me a new one. The new one is perfect.

Nice blade that is truly layered steel ("damascus").
This is a good knife and the quality is in line with what the other reviews have said. The purpose of my review is specifically to comment on whether or not the "damascus" steel is indeed layered steel or simply a pattern.I was skeptical of the price and when the blade came, I was disappointed as indeed it appeared to be a faint pattern. What I did was place the blade in a solution of diluted (1:1) ferric chloride for 8 minutes and the pattern absolutely POPPED out. There was oxidation residue that had to be cleaned off, just like my other damascus blades. The etch showed that the inner layer was indeed the high-carbon steel.I have no reason to doubt that this inner layer is 9Cr18MoV. The other steel is probably 316L, as it was highly resistant (unaffected) by the etchant. In the manufacturer's photos, I'm nearly certain we can say that this blade is comprised of multiple layers of 9Cr18MoV and 316L, since you need those alternating layers to create the beautiful pattern on this blade.In other words, it's definitely not just multiple layers of 316L with a high-carbon core. Being the same steel, they would all react to the etchant the same way, and you'd only have a single wavy pattern like a san mai blade exhibits.Since the etch kills the edge, I had to resharpen it and it cuts well once again. Recommended.

Good for the price
It's a very nice looking knife. Fairly sharp out of the box. Sharp enough to cut paper easy enough, but not razor sharp and won't quite pass the tomato test. That said, it will take a sharper edge if you put it to a whetstone. It seems to hold that finer edge fairly well, at least with my use on a rubberized cutting board. The handle is comfortable to use and fairly well balanced for the knife. It is plastic/resin, if that is a detractor for you. My only minor complaint was I thought the "sheeth" that come with it was actual a full enclosure of some kind. It is not. It is a hard plastic sleeve lined with red flocking that slides over just the blade face. It's more of a 'U' shaped clip. I suppose it willkeep your fingers safe if you want to store it in a drawer, but it won't protect the whole blade from humidity or ware or stay on if your bagging it for travel, plus it's a bit of a hastle to put on. If you're looking for a modestly priced knife that looks good and performs fairly well with some care, it's certainly a good option.
