Making flan with this flanera is a breeze. The cover is so convenient. No more wrapping loose aluminum foil over the top!
People have been making flan for thousands of years. They used what was available in terms of utensils, ingredients and heat sources. It is not an exacting procedure. Just go for it. You need sugar, dairy, eggs, and optional flavoring. A little more or less, longer or shorter, hotter or colder is not going make much difference.I didn't mess up two pans, I melted the sugar in the bottom of this pan. Is it perfect for caramel? No, it is good enough. Don't wait turn the heat down when it is almost melted. You can not turn the heat down too soon. The sugar is so hot it holds the heat and keeps melting. You may always turn the heat back up, if needed.I mixed the flan in a blender at the lowest speed. There were air bubbles, which may have resulted in bubbles in the finished dish, but they did not affect the taste.I used:Sweetened Condensed Milk (store brand): One canWhole Milk: 1 3/4 cupsSugar: 1/2 cupEggs: 2Yolks: 2Vanilla extract: 1 tablespoon.It was what we had at the time. I read One Happy Housewife and the Fork Bite blogs as a guide, along with others and winged it.I cooked it in the wife's 6 cup Instant Pot in pressure cooker mode set on manual for 14 minutes. I left it in until the dial was reading LO:30:00 (I think). By then the pressure had dropped on it's own. I put it on the counter on the small trivet that came with the Instant Pot. Hours later the wife reminded me to put it in the frige. It stayed overnight.Rich and maybe a little too sweet. I'll cut back on the sugar next time.I started with a medium sized plate than had to use a larger one as the caramel almost ran over. There was a big air bubble on the bottom so cut carefully to prevent the caramel from spurting out.This pan is easy to remove when hot. I have made flan a few times in the oven with the water bath method. I used a mixer back then and TWO pots. This was way easier and less to clean. It is the first thing I ever cooked in an Instant Pot.

It is very complicated to find a product that stays closed while making a flan. This product has worked great, I usually use a aluminum foil to make it even more secure. Is the perfect size to make the perfect flan!
