A Practical Tool
I’ve been using this proofing box for my sourdough baking, mainly for bulk fermentation and overnight levain builds, and it has made my process much more consistent.What I like most is the four-sided heating design. The sides heat evenly, while the bottom and top stay cool, so the dough isn’t getting direct heat from underneath. This really helps prevent overproofing, especially during longer fermentations. The temperature control is also fairly accurate. There is usually about a 5 °F fluctuation, and when the room is cold, the temperature can swing a bit more right after turning it on. That said, I appreciate that the display shows the actual internal temperature in real time, not just the target setting. Once it stabilizes, it holds the set temperature well, and I feel confident relying on it for timing.I also use it often for levain. I usually feed my starter at a 1:3:3 ratio, set the box to 72 °F, and leave it overnight. By the next morning, the levain consistently reaches a nice peak and is ready to use, which removes a lot of guesswork from my schedule.It also comes with a small humidity gauge, which is a nice bonus. I don’t actively control humidity with it, but it’s helpful to be able to monitor the moisture level inside the box.This isn’t a fancy or high-tech gadget, but it does exactly what it’s supposed to do. If you bake sourdough regularly and want more predictable fermentation, this proofing box is a solid, practical tool.
