After a few batches, this folding proofing box has made sourdough a lot less fussy. Being able to set the temperature and walk away means the dough is way more predictable, and the 12‑hour timer is nice for overnight ferments. The window seems like a small thing, but it is actually useful to peek in and see how the dough is doing without unzipping and losing warmth. It also folds down flatter than expected, so it does not permanently live on the counter, which is a big plus in a small kitchen.
