Excellent built quality, full tang, sharp and great looking blades
I’m a knife guy. I own a lot of knives, I custom build handles for refurbished Japanese knives from the 1950’s to the 1980’s. I resurrect from rusty mess to gleaming function and I love the history of each blade.I buy the rusty and sometimes bent or damaged blades directly from Japan and repair the bends and damage, remove the rust and custom make new handles.I hand sharpen all my own blades on some combo of natural Japanese water stones, a ceramic rod, steel and leather strop.I looked at a lot of knives as a gift set for the holidays for my son. I prefer serrated steak knives. They stay sharp longer than regular blades and yes, you can eventually sharpen them - I’ve done it.The Foxel blades have substantial weight, the fit and finish is flawless, the blades are nicely polished and the blades are a bit larger than Cutco steak knives which gives them more versatility.I did some Foxel company research and it’s a company run by 2 young entrepreneurs based in Las Vegas. The steel is from Germany and it’s 1.4116 stainless steel, a common and versatile material used for blades. The knives themselves are made in Yangijang, China where a large variety of knives from various manufacturers are built.I attached a few photos. They Foxel blades come in a nice and recyclable cardboard presentation box.I laid 3 knives out for the photos. The Foxel blades have the black handles. The center blades in the photo are old school Cutco and the third blade with the funky Damascus steel blade is made by Yoshimi Kato, a prominent, young, Japanese blade smith whose family has been forging blades since the 1930’s.You can see the nice fit and finish on the Foxel blades in the photos. The Foxel handles have a nice feel and the blades cut with ease. The Cutco blades are OK but overpriced at about $40 each and the quality isn’t as good as the Foxel. The Kato blade is a work of art but that’s a $250+ blade.The only advantage of the Cutco blades is that they are dishwasher safe. The Foxel and the Kato blades are not dishwasher safe.The final photo on the right is a block with a few of my personal blades, some with custom handles.Based on my years of experience with Japanese blade restoration and custom handle making, I think the Foxel blades are both high quality and value priced.One reinforcing note - do not put the Foxel blades in a dishwasher, it’s not recommended by Foxel. I NEVER put ANY good blade in a dishwasher. The high heat and humidity can cause the handles to crack, loosen or both.It takes <1 minute to hand wash and rack a blade. Hope that helps!

I bought this knife as a complimentary knife to a 12” Brisket knife. I bought this one specifically for smoked chuck roasts, and smaller cuts of meat. Initial review is that it appears to be well made. There is good documentation. Yes they have a nice little insert discussing the company, and the care and use of the knife. And yes I read it :-)There are some witty comments in there and it was a nice change from all the legal jargon typically used. First use the knife was sharp, felt pretty well balanced and cleaned up nicely. We’ll have to see how long it keeps an edge, so far I’m pleased and would recommend. My only complaint was that the knife doesn’t come with a sheath, nor does it appear the company sells one as an accessory. The insert that comes with it states not to use the cardboard box as storage because the box will absorb humidity (after shrink wrap is removed) and potentially rust the knife over time. Some of my other knives come in cardboard with closed cell foam and are designed for storage. This one has a cardboard insert as and is designed to be disposable. But despite the packaging the knife itself was very nice. And I’m awaiting a third party universal sheath. We’ll see how well that fits and does as an aftermarket option.

FANTASTIC CHEF KNIF!!
I was in a pinch for a large knife as I was make a roast for family in 2 days and I didn't have a large knife!! I did some research and found this chef knife. Seeing that if had favorable reviews, I ordered. I came in 2 days, (just in time!) This Chef Knife is better than I anticipated. This is the perfect size, 9 in blade. Felt perfect in my hand, balanced, AND so sharp! It cut through the roast meat like butter! I also used it on all the vegetable and potatoes. This was the easiest prep work I've ever done!! LOVE, LOVE, LOVE this knife. I highly recommend. 5 stars!!

Needs a wooden block for storage
Don't buy it if you don't have a wooden block ready to store it. The knife is so sharp, dangerous to store it in a drawer, you may get cut just tring to pick up a knike form a drawer. An old wooden knife blocks slots may be too narrow for this knife, it is very wide, which is nice to slice meat, etc. Luckily I had a block with a wide slot. Otherwise the kife is wonderful. Lightweight, wide, sharp, elegant!
