One of my favourite sai knives

I have most of the global sai knives this was one of the outstanding ones I didn't have in my set that I didn't think I would need oddly now I have it I use it all the time. The thin blade makes it really nice for cutting cheese without a cheese wire, it also slices fresh baked bread and meat for sandwiches very nicely which was totally not the intended use for this knife. It does fine at removing silver skin from a brisket and works well on fish which are more along the lines of it's intended use. Also as the blade steel is different to make it flexible it seems to retain an edge longer than my other sai blades, they all do well in the kitchen and can go several months without sharpening when in daily use but this one so far seems to be doing a little better even with all the off label uses it's coming out for

Awesome utility knife

Fantastic light duty knife. Good looking and uncommon so it stands out when everyone else in the kitchen has the typical globals and shun classics. I have the veg knife but didn't quite like the thumb groove on the larger knife. On this smaller utility knife however, it's nice.

A nice addition for smaller jobs in the kitchen (and perfect if you travel with your knives)

Like the other Global knives I have, this little guy is incredibly easy to work with. The edge was pretty good when I first received it, but I did sharpen it myself just to get to where I wanted it. With a 6" blade, it's not as bulky as some of my other chef's knives, so it's perfect for smaller (cooking for two) jobs.But what I really got it for was travel - we rent apartments and houses rather than spending time in hotels, so having at least one good knife makes everything that much easier in whatever kitchen we're set up in.

(Global SAI-M06) It's a pretty piece of steel

The jury is still out for me on this knife (Global SAI-M06). It's a very attractive design and an impressive piece of steel. I'm not a pro cook but I do know tools.I'm disappointed in the grind from the factory. It's not entirely even and on one side of the blade I can clearly see how the bevel was set on a powered wheel and the operator was not smooth all across the edge creating the bevel. It was decently sharp as shipped but a touch up by hand on a ceramic finishing stone and a stropping improved it. There were some very small knicks in the edge which could be felt dragging it along the fingernail.Not sure if I'll be exchanging it, will see how it holds an edge and if it does well will hand sharpen it like it should have been from the beginning.Pros - Perfect balance, looks like good steel, very nice designCons - Factory grind, Cost. For a $130+ knife the final sharpening and inspection should not have passed.(edit) I ended up returning this one and buying a lower-end Global, which I'm delighted with - better grind as shipped, sharper as shipped, a delight to use. This SAI I received may have been a countefeit based on this.
