High quality saute pan for everyday use.
We use an induction range w/oven below, and need pans made with induction capability. These pans are that. They're made very well, with an extremely comfortable stay-cool handle, shaped ergonomically to fit the human hand. They are the most amazing non-stick pans without teflon that I've used or seen, and NOTHING sticks to the surface. Very easy to clean........the only caveat is that the coating on the bottom of the pans is quite "slippery" on the ceramic range top, and it's easy to slide across the burner position, thus shutting off the induction connection. This is avoidable by simply using extra care when cooking with the pans, making sure they stay over the induction area to avoid shutting the connection off. They are a little pricey, but good saute pans are, typically. We use plastic or wood utensils while cooking so cannot speak to the scratch resistance....they are like new after a few weeks of daily use.

Love these pans so far. Have used several times and have quality feel, solid but not too heavy, food cooks well with a bit lower temperature than I used in the past. Nonstick capability gone after 3 months.
I bought these based on a review of nonstick induction friendly pans. We meticulously followed all of the use instructions. For the first two months the pans were very good but the non stick capability has mostly disappeared for both of them. Forget about pancakes of over easy eggs. They look fine and show no visible signs of flaking or chipping, they are just no longer nonstick.

great nonstick ceramic pans
I looove these pans. I use stainless steel generally but recently bought these to use for eggs and other light items that I need nonstick coating for. They are versatile in that you can cook high heat items on them and get a bit of a fond going. The quality seems to be solid as the bottom of the pans has remained flat and not warped due to the thickness. The lighter color is easier to cook with than a dark nonstick coating. I use the smaller size pan for most of my cooking but it is nice to have the larger one available. I do wash these in the dishwasher but they recommend hand washing.

Nice quality for the price
We cook a lot of our meals, and we use these frying pans almost every day. As you must know by now, non-stick frying pans do not remain non-stick forever. You can pay a lot less than this, and you can pay a lot more. Nothing's going to change that fact.That said, the Valencia pans have a good non-stick surface. These pans are well balanced, a nice weight to them, and they cook very evenly.Greenpan assures us they don't use the surface that sheds dangerous plastics.But they have to be babied. All non-stick pans do. We thought we were taking good care of our last set, but about a year later, they weren't very non-stick any more. Couldn't do eggs any more. So I looked around, read endless reviews, and tried Greenpan again.Babying them is the key. Greenpan says they can be washed in the dishwasher. No, don't do that. Never do that. Don't even think about doing that. Here are some other tips, which I would consider a necessity.- Only use silicon or wood utensils in the pan.- When washing them, use a soft sponge and never, ever scrape them. Don't even use the rougher side that's often the back of sponges.- Never go above halfway on your stove heat. These are quality pans and will cook evenly at halfway.- Always, and I mean always, put a little oil in and pre-heat the pan for at least 90 seconds before adding food.If you follow all these recommendations every single day, you will limit the damage to the non-stick surface and get more life out the pans. We're about two months in with this set and they still clean just as easily as the first use with just a soft sponge and a bit of dish soap.
