Great for dutch oven bread.

Works great for making dutch oven bread, which is what I bought it for. The cast iron is pretty rough, so I could see it being an issue for stickier kinds of bread. I wish it was a tiny bit bigger, but size is as described.Here is my recipe sized for this pan: 1.5 cups white flour, 1.25 cups whole wheat flour, .25 cups flax meal, 1/4 teaspoon active dry yeast, 1.5 cups 100-110 degree (f) water, 1 teaspoon salt. Dissolve yeast in water, mix up other dry ingredients in large bowl. Add yeast/water and mix. It should form a very sticky dough. Cover and leave 18ish hours. You should see lots of small bubbles when ready. lay out on a floured silicone baking mat, and form into a rough oval loaf shape. Cover and let sit for 2 hours. Well before baking, preheat oven and pan to 450 deg. f. Carefully drop loaf into hot pan. Bake covered for 30 mins, uncover and cook 10 more.

Good but smaller than traditional loaf pans

Great cast iron, but smaller than the traditional loaf pan I am used to. Had to cut the normal dough into halves for this loaf pan, so it made two smaller loaves instead of one big one. (I use them as two pans.). Bread came out great, seems as though cast iron is a better material than thin steel for a loaf pan! Very heavy. Good pricing and classic cast iron cleaning.

Beginner baker

I don't delve much into sourdough, rather use the wet, no knead dough (6cup flour) and this little thing served it's purpose and gave me a nice loaf shaped bread. The crust formed nicely and since I use parchment, slipped right out. A good deal for the money, esp if you're a beginner baker (like me) and want to graduate to shapes...There were no hotspots and the bread baked evenly. I'm going to try the japanese milk bread in this one next.This is a hefty little bread pan the solid feel of it is good , cleaning was easy this time because I did use parchment, so a quick soapy finish off and dried immediately.
