Wow.... Where Have you Been all my Life???
I used a little 3-pound horn stuffer for many years and I'm not going to lie to you, I didn't usually look forward to stuffing sausages. This year I finally decided to upgrade to the Hakka 15. All I can say is "why didn't I do this years ago?" My little horn stuffer used to have a lot of "blow by" and I was always having to put meat back through the stuffer. As a result, I had a lot of smearing as a result of double handling. That little stuffer was also a LOT of work and after stuffing a 30 - 40 lb batch of sausage, I was exhausted. With the Hakka 15, this cut my stuffing time down by probably 80% and made the process much, much, MUCH easier!Before I even started my first batch with the Hakka, I mounted it on a 2" x 12" board about 24" long so that I could C-clamp it onto my counter top to eliminate any movement. I just got some 3 1/2" long bolts from my local hardware store and affixed it permanently to the board. This thing is absolutely rock solid mounted to my counter top and doesn't move a millimeter.The first few times I used it, I didn't fill the hopper completely full because I wasn't sure how much pressure it would build up and how hard the handle would be to turn, but after my first few hoppers, I just filled it completely to the top and it handled the process perfectly with exactly 0.0% "blow-by". At the very end of the "press", there is virtually NO sausage left in the hopper other than what is left in the curved outlet tube at the bottom, but the hopper is 99.5% empty.....and clean up is a breeze!!!!The only minor concern I had (or have) is that I use Star San to sanitize everything and it seems like the bottom platform appears to have some minor acid "etching" as Star San is an acid and I just was not expecting that as Star San generally does not have any effect on stainless steel. The hopper is completely fine, it's only the frame that appears to have some of this acid etching on it so I think the frame is made of a different quality of stainless than the hopper.I have done about 100 lbs of sausage and salami so far this year and have about another 100 lbs to go and this year I'm actually looking forward to stuffing my next batch.

Make stuffing easy
I’ve had this for a year and love it. I use it for venison snack sticks and bologna and pork sausage. I bought the 10mm stuff tube to help with the snack sticks, the 16mm is just a touch too big. Also stuffed 3in bologna. Works great and prevents the over grinding and air pockets I was getting when I previously used my grinder to stuff. My 7yr old can run the crank, as long as I have it clamped for the table. It’s faster to stuff the casings than fill the machine. Totally worth it. Glad I didn’t cheap out with the sub $100 ones. Easy to clean. This is quality and I can see it lasting for decades.

Worked Great, Fabrication is great, Very high value
I was looking at the 7 pound/3 liter unit and jumped up to this one for the incremental $20 and am very glad I did. At the same time, this is about as big as I'd want to have for my home kitchen use.Functions great. For a first use, I stuffed breakfast sausage that I had let gel for a few days in the cooler into sheep casings. I have found to be a good test of a unit. There was plenty of leverage to force the meat through the 10mm tube with very even pressure. Tubes are about 8 inches which is plenty long to hold casings, without being so long to create more friction on the force meat. I was able to load the barrel without air and all air left the air bled valve - I had not bubbles in my casing. Uniform speed on the lever resulted in uniform speed out of the tube. At the bottom of the barrel, the elbow that leads into the tube is nice and large to allow easy cleanup.The unit cleaned up pretty easily. The air valve and the silicon gasket come off with ease and are easy to clean and put back on. One upgrade I will do it to replace the philips head machine screw on the air valve with small knob so that it really requires no tools to clean and adjust. Looking at the gasket, it is pretty robust and would have to be abused to wear out.The stainless steel looks to be of high grade and maybe more importantly, the whole unit seems to be of the same grade. All the metal work is very good for a unit in this price range. No sharp edges, very clean welds and very even brushed or polished finishing. The worst condition on the whole piece was a small burr on the air valve threads, which is trivial.Shipped fast in good carton, which is well cushioned with Styrofoam. One thing I would have preferred is a heavy paper pulp package cushion for storing in the original packaging. I think that would last longer than the styrofoam, which comes apart a bit with each use and is, of course, nasty to dispose of.Would highly recommend this unit for any kitchen.
