Good for convention oven, not so much for wood fired.

Needed a pan to make it easier to pitch rounds in my wood fired pizza oven. These just aren't thin enough. Dough does not cook fast enough in a HOT wood fired oven. So while it's easy peasy to remove from the stone with any peel, it comes out doughy. They do work fine in a convention or conventional oven at a lower, longer temperature.
