When I first received this sourdough proofing basket kit, I was disappointed to find that the temperature control didn’t work properly. I had to return it for a replacement, which was a little inconvenient. Thankfully, the new unit works perfectly, but I’m subtracting one star because of the initial hassle.That said, once I got a working unit, I was very pleased with its design and performance. The proofing box offers six preset temperature settings as well as a timer, which is incredibly useful. For sourdough bakers, consistent temperature control is important because yeast and bacteria thrive best within certain ranges—too cold, and your dough won’t rise properly; too warm, and it may overproof. Having reliable presets takes the guesswork out, especially during seasonal changes when kitchen temperatures fluctuate.The 2L silicone box is easy to clean and folds down neatly for storage, which is much more convenient than a bulky traditional banneton. It also comes with practical breadmaking accessories like a liner and scoring tools.So far, I’ve mainly used it for bread, but I plan to experiment with yogurt making next since the steady temperature should be ideal.
Don't waste your money on this one!I was looking forward to make sourdough bread and not having to worry about the temperature in my kitchen. The initial excitement quickly turned into disappointment. It does NOTHING. Well .... the power comes on, and that's it. The control does not work. At first it would not stay at the selected settings. After the 3rd attempt (thinking maybe it was an operator error), it now does not even let me select anything. It stays on its "standby mode" and that's as far as it goes.Back to making my bread the old way.
This didn’t work at all. I tried plugging it in, unplugging it and reinstalling it. Nothing worked. I checked the temperature on water and starter which had been supposedly warming for hours, nothing. Too bad.
This heating sourdough banneton proofing basket kit has been a game changer for my baking. The built-in heating function with 6 temperature settings takes all the guesswork out of dough rising, especially during colder months. I love being able to set the timer and walk away knowing my dough is proofing at a consistent temperature.Clean up is easy and the silicone basket just wipes out. When done, this collapses for easy storage.
Easy to use. The multiple temp settings are very helpful. Just gotta be patient with it as it's rising bread.
I really, really wanted this heated banneton to work. I’m an experienced bread baker and have a solid knowledge on technique, including how to control dough temperature for a desired proofing schedule. Maybe it’s me, but try as I might, I could not get the temperature and timer to work in any kind of reliable way. I still wonder if maybe I’m doing something wrong, but it shouldn’t be this hard.Initially, I tried several tests where I set the temp to my desired proofing temperature at 72 degrees, while the ambient temperature in my house at that time was 70. I filled the banneton just over half way with 68 degree water. It took several hours to bring up the temperature on the water, then very quickly it exceeded the set temperature, as shown in the photo. Dough being proofed at 80 degrees proofs much faster than at 72, which was not ideal for me as I wanted a slower controlled proof. If an 8 degree difference was reliable between tests, I could have adjusted for that. But it became even harder to control on subsequent tests, where I couldn’t get the number to stop flashing or displaying random numbers. The actual temperature of the water in the banneton never matched the set temperature or even came close.I’m willing to concede that perhaps I did something incorrectly or pressed the buttons in the wrong order, I don’t know. If there is a very specific way to set it up, it’s not intuitive and doesn’t seem to be reliable. I plan to re-review the instructions yet another time, just to make sure I didn’t miss a step. If so, I’ll revise my star rating.I gave it 3 stars because I still think I can use this device, although not in the way it’s advertised. For example, the fold-up design is great. I could see using this as a travel banneton, where I could still do the final proof in it, as long as the ambient temperature was in the range I needed. Another plus is that the silicone makes it a bit easier to release for baking than a traditional banneton, if you’re less skilled with actual baskets. That said, however, you still need to know how to handle the dough to keep the delicate “skin” of the dough shape intact. If you want the artisanal look of rings on the baked loaf, it would help to tap a small amount of flour (or rice flour) through a tea strainer or sieve to thinly line the ridges inside the banneton with a dusting of flour before carefully placing the dough shape inside. Those floured rings will then bake onto the surface of the finished bread. For less experienced bakers, it’s important to keep in mind that bread baking is much more than a dough recipe and a container to put it in. Technique is key; how the dough is mixed and handled is critical for good results, and a proper proofing container is only part of the equation.I hope I can either figure out why the controller on my unit isn’t working, or the manufacturer will improve the electronic component. The concept is useful and innovative, so I hope the temperature regulation and timer issues can be resolved.
