Pretty good

I use these to cut the spine out of whole chickens to go on the smoker. I usually do 12 or so at a time and these make it quick and easy. They come apart for cleaning which is good and bad...the nut comes loose too easily then the blades separate and make them not cut well. Have to stop and clean then re tighten the nut about once for every 12 birds. They seem like they will holdup well though.

NOT NSF Certified– NOT FOOD SAFE – Very Poor Quality – RETURNEDI am old. I have been working in food preparation for too long. I know I should not expect today’s products to be built as well as they were built in the good old days. I know food handling products will not be built as well, but I demand that food handling products be food handling safe. Alas, I am often disappointed as I am with these NOT FOOD SAFE – NOT NSF CERTIFIED Poultry Shears. NSF stands for National Sanitation Foundation which is an international independent laboratory that tests food use products for food handling safety requirements.These NOT NSF CERTIFIED Poultry Shears would not pass NSF food handling safety testing. These Poultry Shears have a hollow space where the spring sets. You cannot clean inside the space inside a hollow space. When you use a food preparation product with an inaccessible hollow space like this, food waste collects in that hollow space and grows food borne illness pathogens. If you attempt to clean that hollow space by soaking the scissors in dishwater, then that hollow space gets really filthy and stinky from the bacteria growing in that hollow space filled with dirty dishwater and food particles.I can find plenty of uses for these shears in my workshop, but not in a restaurant where their discovery would appall the Food Inspector. If a Food Inspector found UN-cleanable, NON Food Safe, NOT NSF Certified cookware like this, that food inspector would shut down that restaurant right quick.Besides the design being flawed, the manufacturer does not have adequate Quality Control inspections. I had to adjust the handle nut to remove the large gap between the blades. Scissors work by having the blades lightly touching so that whatever you are cutting does not get in between the blades and gush out. The attached photograph shows light shinning through the unacceptable gap in the blades.It was quite ridiculous that Silver Armadillo included a “BONUS BASTING BRUSH” that itself IS NOT FOOD SAFE nor NSF Certificated. Please see the attached photographs showing that the Silicone bristles are not sealed at the handle thus creating the forbidden hollow space. I have Basting Brushes that ARE NSF certified with no hollow spaces to collect food borne illness pathogens. The attached photograph shows that the bristles easily fall off the handle exposing the forbidden hollow space.

I use these every day as a chef

I use them to process chickens and lobsters . I absolutely BEAT them Un -mercilessly for almost a year now. No Rust , no wear and tear . I did have to tighten the center bolt once and it never became loose again . They have a copper or brass tough little round spring in the center that has lasted for 500 dishwasher runs. I’m going to say approx processed 60-70 lobsters per week for almost a year not including chicken joints and still cut without ever sharpening .Wood handle is indestructible , they look very professional and live up to what they look like . This is the baddest pair of food shears I have ever owned .Love the fact they lock . Just top quality no doubt !

This is my second pair of Silver Armadillo Premium Chef Scissors. Best scissors for cutting poultry. We make spatchcock chicken on the smoker and these scissors make cutting the spine very easy.
