Excellent Stainless Steel Cutting Knife for Tomatoes, Onions, Chives and More!

I am always looking for cut wear to have on hand in the kitchen. While I have a chopping block holding my knife collection, I like to have good standalone knives as well. I prefer Japanese knives due to their high quality and sharpness. That being said, I am happy with the ease of cutting with this. It is lightweight and has the perfect length for chopping tomatoes and onions. I can slice them nice and thin for sandwiches. I find it easy to clean as well. This is worth its value. It makes cooking and storing faster and easier. I am really happy with this. It is a keeper.

But I'll add a bit more below about what a 10Cr15CoMoV steel is.The knife handle is comfortable to use, and is shaped well to prevent slipping.I have other HOSHANHO knifes, and they have all been good quality, have been durable and have performed well.Now, for those that want to know more about 10Cr15CoMoV steel.Edge Retention and Sharpness10Cr15CoMoV steel typically achieves a hardness of 58–63 HRC, which allows for a very thin, sharp edge—ideal for knives for slicing cheese. This steel holds its edge well, meaning less frequent sharpening is needed compared to softer steels, and it maintains precision for extended periods.​ Again, great for a cheese knife.Corrosion ResistanceWith about 15.5% chromium, 10Cr15CoMoV is highly resistant to rust and staining, making it suitable for use with acidic foods and in humid kitchen environments. Proper care (drying after use) is still recommended, but it outperforms many other steels in resisting corrosion.​Toughness and DurabilityThe addition of cobalt, molybdenum, and vanadium enhances toughness and wear resistance, helping the blade resist chipping and deformation during use. Beautiful cheese knife with a too short handle

This knife is super sharp, easy to care for and quite useful for slicing cheeses. I like having the serrated edge. However, I do wish the handle was a bit longer. The handle is short, even for my medium sized hands. If you have petite hands, you will probably like this knife handle style quite a bit because it is light and effective. The whole knife and handle does look beautiful, but it's worth mentioning that Hoshanho produces a wide variety of knives so if you do not have petite hands, I do recommend first looking at their knives without this handle style. 4 stars

Just okay as a "cheese knife".

This is a really nice knife, great quality, but as far as a cheese knife, specifically, it's just okay. I used it with some soft cheese, Muenster, and Havarti, and the cheese stuck to the heavier, lower portion of the knife quite a bit. I had to manually remove each piece of cheese after cutting it. I also use it on some very hard, aged white cheddar, and it more or less crumbled as it was cut. I think that's just because the cheese was that dry, not any shortcoming of the knife itself. The thing is, it has a serrated blade, which I don't think is necessary at all for a cheese knife. You never really use a sawing, back and forth motion when cutting cheese. You just pushed the blade straight down. The serrated edge is basically of no benefit. What I would say about the knife overall, is that it's an excellent, sharp knife. It would make a great steak knife, or a great knife for cutting onions, or any number of things, it's just not something I would buy specifically for cheese. If you get it, it'll do the job with cheese, but it'll also do many other jobs with many other food items, so I guess in that case, it's an excellent knife. Just not the best cheese knife. I'm giving it three stars, only because they call it a cheese knife, when I know there are better types of knives out there for that purpose. If you want a good general purpose knife, I would recommend it for that. Not too big, not too small, well-made, nice handle, good for more than cheese.

Great knife for cheeses and more, hand wash only

This knife impressed me more than I expected it to and I can highly recommend it for multiple reasons after using it for awhile now. It's substantial feeling in my hand but it's lightweight and ergonomic to hold onto, it looks impressive too. This serrated knife should only be hand washed and the beautiful wooden handle is comfortable to grip onto. This knife has worked great for cutting all different types of cheeses and veggies and fruit too. The open design of the blade prevents or makes it much easier to remove any stuck on slices. The forked end is so helpful and useful for moving things around, what a great idea to include that on this already useful sharp knife. The quality is much better than I thought it could be and I have been pleasantly surprised with how much I have used it in the kitchen for different tasks. This is easy to hand wash and I make sure to dry it off right away to keep it in good shape. This unique knife would make an excellent gift, especially for anyone who appreciates being able to cut up and serve different cheeses and other snack foods using one knife. This is a sharp and serrated knife with a forked tip that works great for different types of cheese and much more.
