Cutting vegtables can be fun and easy
The HOSHANHO 6.5 inch Damascus Nakiri Knife was purchased last week as our first speciality dedicated vegetable knife and our first Japanese style knife. We were delighted by the quality packaging and build quality of the knife.Selection criteria included high quality VG-10 steel, size, appearance, and price and the excellent video by "HSH-DE" who demonstrated on a cabbage and an onion. Also liked the flexibility of a santoku and nakari in one. Also worth mentioning is the shape of the wood handle is perfect for both right and left hand use.Over the weekend we used it on 2 seasonal vegtables, butternut squash and white cabbage.First, the hard butternut squash was cut into 1 inch cubes for roasting and the sharpness, secure hand grip, and scalloped santoku style blade sides to prevent sticking made this usually difficult chore a breeze. She said "wonderful!"Secondly I made a large batch of confetti coleslaw using the white cabbage. Easily sliced the quartered cabbage into thin ribbons and then used the knife as a chopper for the cross-cuts. We were both impressed with how easily this very sharp knife chops for perfect gourmet sizing. I said "amazing".Bottom line: an easy to use vegtable prep knife with great feel and balance.Outstanding for chopping. A joy to use. A "cut-proof" glove is recommended due to the sharpness.The actual weight we measured on 2 digital scales is 8.5 ounces which is great for everything including chopping.

They look really nice and feel good to hold
I received my Chef, Nakiri, and Fillet Damascus knives today, and the Damascus Paring knife is on its way.These knives look really nice and they were on sale. I'm replacing my dollar knives, but I don't need professional chef knives. The Hoshanho knives seem to be a good choice. I like the way they feel and they look really nice too.I'm worried about the blade chipping, but I'll be careful. The blades are thick and have a nice finish.Update: I just received the paring knife (same style). It looks and feels great! Since I have the Chef's knife and the paring knife, I guess I won't need to get the utility knife.I'm happy with my purchase. Mostly because they look and feel really nice.

Depends on your viewpoint
Sharp out of the box. Don't know about edge retention yet, that's why it's only 4 stars. These "gentle folks" think you can give an honest review on something a couple days after you get it. I don't think so. Weight is good, cuts well, handles well. Edge retention is yet to be determined

Sharp enough to shave with!
Out of the box this blade is the sharpest thing I have ever seen. Rested it on a green pepper and the weight of the blade alone sliced right through. The bevel edge appears to be less than an ideal 15 degrees so some care has to be used to not chip its thin edge (avoid bone). Excellent for dicing vegetables. True damascus steel but not prone to rusting, time will tell how it holds an edge.
