I had a hard time blanching bagels and thought these would be perfect. They are very nice, but they float and the bagels didn't submerge as I needed them to. They also stuck to the silicone, so I think a little oil might help. I haven't used them since but will try them again. I haven't made donuts with them - maybe they work better for baking.
I started making homemade bagels a few months ago. These little jewels will ensure you have a hole in the center of your bagel after rising, but the assertion was that you could boil your bagel on the ring and then bake them on the ring. Well, these little suckers float in the boiling water so you can only boil one side of the bagel. If you push in down in the boil water, the bagel pops up in the water and you still won’t have the top side of your bagel boiled. I do use them for shaping and first rise, but pop them off so I can boil topside of my bagel and just bake them on a silicone sheet. I burnt my fingers after trying to put the hot bagel back on the ring for baking. They serve a good purpose, but not up to snuff on their advertising.
