More durable than the wire-based competition
I had purchased a couple of cheese slicers in the past that use the replaceable wire. They work well until the wire eventually breaks. Once you replace the wire, the life of the second, then third, etc. seems to get much shorter with each replacement. So far, this heavier-duty option seems to be a much better product. The stronger blade does a nice job with the harder cheeses, but can get a bit messy with softer varieties. Cleaning is easier though, as the blade - since it has a bit of heft - can be wiped clean easier, in my opinion.I think the key is to cut slowly and apply a bit of pressure on the blade with a finger (top side) to give it a bit of support. I like this style as I think it helps lower the pressure on each of the two ends that hold the blade in place. I think I learned this from the wire product, and I am not sure if it really needed with this. It is more of a peace-of-mind kind of thing!Anyway, good product with a much better design for longer life.

Good.
Really nice, but kind of a pain to clean as it always leaves tiny little slivers of cheese on the bottom. The blade could be a bit more stiff as it tends to bend away when you are cutting.

Gouda cuts like butter
This little guillotine cheese slicer is awesome! I love little kitchen gadgets that makes adulting a little more enjoyable. I was excited to use this but I didn’t have a full block of cheese to cut, just a last lump of Gouda from my previous attempt at slicing with a regular knife. We LOVE Gouda but if you know Gouda, then you know it’s pricey and more affordable to buy in blocks but also a complete pain in the rear to slice. The slicer is lightweight and a nice small size which makes storing easy. Perfect for limited space kitchen like mine. It came with a safety glove. At least I think that’s what it was which makes sense cause that blade was shaper than sharp. The whole thing was easy to clean. Can’t wait to slice more Gouda!

Blade is way too thick.
I've used the wire cutting kind for decades and I really like them. But I dislike having to replace the wire every so often. The handle on mine no longer tightened the wire cutter enough to hold it taut. So I ordered this one thinking it might last. While the slicer is thin stainless steel it is pretty durable. But the blade was so thick I could not get thin slices of anything. So I actually removed the blade and painstakingly honed the edge down to what it should have been in the first place. It now slices cheese 2 mm thick and thicker if I want. I haven't tried it on anything else even though it's sharp now that honed the blade. For me it's a cheese slicer and that's all it will be used for. Now that I fixed it it works like it should and I'll hang on to it. Sorry, I could not get a good image of the newly reshaped and resharpened blade. You can kinda see it here. Wish I took before and after pics. Anyway, unless I got a defective one-off bad blade I would not recommend this slicer mainly because it does not perform as advertised. It took a lot of work to get it functional.

Cheese cutter with a blade!
Love that it is an actual blade and not a wire. Stainless steel is easy to clean.
