Thin Blade, Clean Cuts, Great Steel

I had previously purchased a Kanngou AUS-8 Gyuto knife, and I really liked the quality of the steel, the design, and the blade geometry. At that time, I did point out that the handle was not well finished, as the metal edges were protruding from the wooden handle.This AUS-10 Gyuto feels slightly heavier than the AUS-8 version, but it is clear that more attention has been paid to the handle finish, as there are no noticeable imperfections.One thing that stood out and impressed me as soon as I took it out of the box is how thin the blade is, which allows it to deliver an impressive cutting performance.Regarding the steel quality, if this knife is sharpened with the proper stones and good technique, it can reach its full edge potential better than the factory edge.In my daily work, I use this knife to process pineapples (cutting them into cubes, packaging, and freezing them). What I’ve noticed is that it leaves a very clean cut: the pineapple cubes release very little juice and take longer to oxidize. When I used traditional knives, the pineapples were crushed, released a lot of juice, and quickly turned brown. For this reason, blade thinness is something I pay close attention to when choosing a knife.

A really nice knife for the money

This knife was very nice surprise, and much better than I honestly thought it would be. The presentation box is first class. The knife and its accessories are packed very well in the box and there's a certain type of wow factor when you first open it. The knife comes with a certificate of authenticity although I'm not sure what that means. The important part is that it does come with a leather sheaf so if you are storing it in a drawer or transporting it somewhere you don't ding up the blade edge. The edge is razor sharp and you can all but shave with it. It is very well balanced which means that when using it for extended periods of time your hand won't get tired. Lastly, the tang is absolutely flush with the beautiful wood handle. This means you won't rough up or snag your hand while holding it. In my mind this is a really good value for the dollars. I will be ordering a second one to give as a gift.
