Perfect Space-Saving Alternative to Rattan Bannetons — Performs Just as Well!
I’ve been baking sourdough for 3-4 years, and I’ve got all the rattan bannetons. These collapsible silicone ones caught my eye for space-saving—had to try. Pretty good - pros and cons:
I have the set that simply comes with two proofing baskets and 1 lid.Pros: First off, I love that these squash down so that I can tuck them away in my ever-limited kitchen cabinet space. I was interested in trying out the whole "you can rise and bake in the same container" (normally I use a proofer and then transfer to a Dutch oven after the last stretch and fold). I love that I was able to wash these in the dishwasher, although I will say these are also easy to spritz with spray soap and rinse. I took their advice and sprinkled the bowl and the dough with flour and none of the dough stuck. They're lightweight, and the round silicone lid was great even on my big mixing bowl for the first mix and 4 stretch-and-folds - it was nice not having to bust out plastic wrap. I baked my loaf in one of the baskets and it did not impart any weird smell or flavor.Cons: They're not very big so a standard 4 1/2 cup flour sourdough recipe is going to overflow at least the round one (I haven't tried the elongated one yet, but it's small, too). I did my mixing and stretching in a big bowl and then transferred to the round proofing basket (after flouring the bowl and dough) and put the lid on. After 3 hours in warmth, the dough was already up to the lid and sticking. (Thankfully I had the foresight to also flour the top of the dough because I was afraid that might happen. I still had to carefully pick it off as it was trying to stick). The dough was up and overflowing the top of the bowl so I couldn't cover it and it started to dry out. I baked it and could not cover it (same reasons) so I put in trays of boiling water for steam, but it just didn't rise the same bubbly way as when I use a covered Dutch oven, and the top started getting too brown when the food thermometer only read 145F, so I took it out, flipped it and let it cook a few more minutes upside down. Instead of a bolle, I have a flat-bottomed loaf, but at least it looks cool. I think if these came with a top that was rounded and curved to allow room to rise, these would be much better. These are durable, but they are floppy material so it's a little wonky taking in and out of the oven without a slider or tray - just keep that in mind. I think it mostly did its job, but it just wasn't big enough to function properly for a standard sourdough loaf recipe to feed a family. These will work better for smaller recipes. I will, however, use the heck out of this silicone lid on bigger bowls to proof my bread, and in fact I'll use it any time I need to plastic wrap a bowl cover, thus cutting down on waste and cash since I can just use this reusable silicone lid. It's nice and big.You get 2 proofing baskets and the lid for 20 bucks, so I think the other set that comes with a set of tools for 5 dollars more is an even better deal and recommend going with that. Still a cool product.
