Very sharp and very nice kitchen knife

The Kimrose Santoku knife is a beautiful knife that cuts very easily and precisely. It has a nice heft and slices through pretty much everything like, well, like a hot knife through butter.The knife has a lovely raindrop Damascus pattern with an excellent Chinese steel at its core, which was what attracted me to this blade – many makers of kitchen knives either do not tell you what the steel is or make it difficult to find out, to your later dismay. Whether or not it’s actually made with a folded Damascus process I have no way of knowing but it cuts really well and feels nice in my hand. We have several “really sharp knives” and this is the one I really like.The full tang and the G10 handle, found on many good quality knives, were also attractive attributes. Basically, I knew what I was getting and so felt very confident that this knife would live up to expectations. And it has.I had to get used to the sheath and for a while kept wanting to put it on upside down but I’m used to it now and I think it protects the blade very well. The sheath is said to be wood and it feels like wood and I feel comfortable just having the knife in the drawer.As for sharpening I have a friend who has some very good quality sharpening stones and knows what he’s doing when it comes to sharpening knives and cutting tools – that’s where this knife will get sharpened. For now, I have some ceramic rods from a well-known knife dealer that I use for touch-ups.I’m happy to recommend this knife. Good price and good quality.

Scary Sharp

"Deadlier than a lion in the backseat of your car" - husbandI don't know if this knife qualifies as "snooty-chef quality", but I'd say it's a very, very good knife and definitely the most terrifying fancy thing I've ever owned. It drops through tomatoes with almost no motion, lettuce may as well not even be there and cooked chicken doesn't stand a chance. I'm terrified to take the thing out of its box.Speaking of the box, it's a beautiful display with fuzzy lining and magnetic closure down one side that took me an embarrassing amount of time to find.The knife itself is a gorgeous piece of work. The transition between fiberglass and metal is so smooth you can barely feel a change between the blade and the handle. The cutting edge is a fine glimmer beneath the swirling Damascus patterns that catch and hold the eye captive.Treat with care and caution... My husband fileted a very thin slice off his finger while washing it for the first time. He didn't bleed at all, which means this knife is more than capable of making paper thin filets.It will likely be the first thing I reach for in the event of a break-in.

Good Knife, but is it worth the price?

This knife presents very well. It comes in a custom molded box and includes a black stained wood sheath for the knife.The knife itself is very hefty to hold and I am pleased with the balance of it. I cannot tell if it is a full tang blade, but the handle blends seamlessly into the blade itself and is curved and feels pleasant in the hand.The metal of the blade is very fancy and patterned as I believe most Damascus Steel is supposed to be. The blade itself is sharp right out of the box and cannot find any flaws such as a chips or burrs in the metal at all.The only issue I had, was that cutting with it the dimples in the blade did not seem to keep food from sticking to the blade as I am pretty sure they are meant to do. This is not a big deal, but I have used lesser quality knives where food fell away from the blade because it was a dimpled bladed santoku knife.Do I think this is a quality knife, yes. Do I think that I would pick it over a Henckels knife that is priced about the same? No. This knife is a virtual unknown where the other brand I mentioned has been made since 1731. I would stick with the known brand over the unknown especially at such a high price point.

Gorgeous damascus and SHARP! My new favorite kitchen knife

So I'm a little partial to Damascus but this truly is a beautiful knife. It comes in a nice velvety box, has its own wooden sheath to cover that gorgeous blade and keep it protected. I did notice that it has left little superficial scratches on the blade after only using it a couple times. Hopefully that doesn't get worse over time but we will see.It sliced paper with hardly any effort, slices veggies nicely, I tried to use it to cut into a very thick sirloin to see if it was cooked through and pretty much cut the half cooked 3 inch thick steak in half with very little effort. I have another one that came in a set with wooden handles so I have something to compare to. This knife is nicely balanced with the wood handle, it feels just right in your hand, heavier toward the handle so using it is very natural. Feels good in your hand. Intimidates my finger tips a little but handle it with care and don't catch it if you drop it because you will probably be picking up your fingers too. Definitely keep this put of reach of children and clumsy adults. Granted I am clumsy I take extra care when using implements that can maim me.Edge didn't get deformed on a solid plastic cutting board, haven't given it the type of tests they do on Forged but I'm not trying to destroy it. Seems pretty solid and well made. Will update if that becomes untrue at some point.
