Very sharp
I have several KitchenAid brand kitchen knives made from the Japanese steel, these knives are extremely sharp and durable compared to the high end German ones I have purchased previously. I have complete set of a KitchenAid Japanese steel knives now from the chef knife all the way down to the small pairing knife.
A good quality knife that still looks pristine after hundreds of top-rack dishwasher cycles.
The chef knife is heavy and has a nice balance. It was easy to cut with and to control the knife in the hand. The bottom corner is not sharp and so safer. It does not come super-sharp out in the packaging but I can sharpen it if I want and also not be dangerous. It is the classic chef knife profile with the round part at the top.The handle seems to be made of metal with some small coating for gripping. This is a unique design where it look like the metal blade flares out to make the handle. This is the first time I've had a knife with this design and it looks really nice.The knife is in a very tight plastic packaging and the knife is not inside the safety sleeve. When taking the knife out, you have to be careful not cut yourself with the cut plastic or the knife.
It arrived extremely sharp right out of the box, making it a joy to slice through vegetables and meats. However, I've noticed that it loses its sharpness faster than expected, which can be frustrating when you’re in the middle of prepping a meal.Japanese carbon steel is renowned for its durability and ability to hold an edge longer than many other materials, often achieving a hardness level of 56-62 HRC, compared to the softer steels typically found in other knivesThis means you get a blade that can perform well with regular use, but it does require maintenance, like regular sharpening, to keep it in top condition.While the knife’s sharpness out of the package is impressive, the quick dulling makes it less ideal for those who want a low-maintenance tool. If you're willing to invest the time in care and sharpening, it can be a solid addition to your kitchen. Just keep in mind that it's not as forgiving as some other options on the market.Overall, this knife has potential, but its longevity and performance depend on proper upkeep.
So far I am very impressed with this knife. It cuts through raw beef and chops vegetables with ease. It cuts as good as some of my high end knives.The handle looks like wood but is made out of stainless steel. The knife has a good weight and the handle is comfortable and balanced in your hand.The product information says you can put in the dishwasher but I will be hand washing and drying as is recommended to extend life of the knife.In comparing what the product listing information says to the actual product received I am a little confused.The product title in the listing (as to the blade ) says :“ High Carbon Japanese Stainless Steel Blade 8 inch.” But on the front of the knife packaging is says: “Forged Japanese Steel Blade”, on the back of the packaging it says: “ High Carbon Japanese Steel”. High carbon steel gives a knife long lasting sharpness and stainless steel gives a knife rust resistance. I guess time will tell on this if the blade is only a high carbon or forged Japanese steel blade because it will be prone to rusting if there isn’t any stainless over it. For this confusion I am deducting a star , I don’t like discrepancies between product listing and the actual product.Overall, I am impressed with the performance of this knife and if it stays sharp and rust free I will be super happy. Good value at the current price, but I wouldn’t put in the dishwasher and I would probably dry immediately.
This knife was sharp right out of the package!The construction was solid, the handle is smooth and well attached to the shank of the knife blade. No wobbles or sharp edges, I expect this will hold up in the long term.I like that they included a custom fit cover, this will help keep the knife sharp when stored in a drawer.Cuts are easy and smooth, and the santoku design means this slides right through tomatoes and other vegetables.We'll see how well this blade holds and edge, but initial impressions are very good!
