The PERFECT wok
I should mention up front - I have professional grade hand-hammered 16-inch carbon steel woks and I have been stir-fry cooking for over 25-years, replete with genuine wok hei. For years I have wanted a 10-inch flat bottom carbon steel wok (for those occasions when I want to cook something small for myself) that could stand up to true high-heat stir frying. I have bought and returned many woks because they were poorly manufactured and/or made from inferior lightweight material. Recently, I purchased and returned a 10-inch carbon steel wok that seasoned great, but was so thin it actually warped during the seasoning process and was no longer flat on the bottom. Then I saw this KitchenAid wok and ordered it.The second I took it out of the box I knew it was a keeper. This is a rock solid wok that has great feel and is the perfect size for cooking for one or two people. It seasoned perfectly without warping, the handle feels great, there is no worry about it suddenly working its way lose, and while I could live without the Carbon Nitride coating, it is only an added plus to this awesome wok.This is NOT a non-stick wok, and I would not buy a non-stick wok - a person cannot achieve the same quality of stir-fry or wok hei with any non-stick wok, and there is absolutely no need for a non-stick wok if a wok is seasoned and used correctly. Food will slide around in it like the food is on ice.I am glad that I did not give up and that I gave this KitchenAid wok a try and I encourage you to do the same - you will not be sorry. Heavy and heats up quickly!
This is a lifetime type of frying pan. This thing is heavy duty and should last as long as a cast iron pan. It is beautiful and large. It’s smooth inside and out and works really well in an induction stove. This pan will develop a patina over time just like any carbon steel pan (think a wok). As long as you have high heat it is non-stick after seasoning. It’s easy to clean as you don’t have to worry to much about it and wash like a stainless steel or cast iron…the biggest thing is to dry it quickly. The pan has great heat distribution and have not noticed any cold spots. Overall a really nice pan that should last you a lifetime.

I had such high hopes that this pan would work. I like omelettes and was trying to get away from other nonstick pans. I have seasoned this pan several times and done all I could think of but it sticks soooo bad. I guess if I floated the omelette in oil maybe that would work but why would that be healthy compared to nonstick. When you scrub hard enough to get the pan clean then the seasoning is ruined. I really could use some good advice because I don’t want to give up. I paid $200+ for two pans and both are disappointing.Update 11-24-24After continuing to be unsuccessful cooking an omelette I have abandoned carbon steel pans and switched to ceramic pans. So far ceramic has given me success.Update 11-27-24Tried to cook bacon for the holiday green beans and bacon stuck so bad to pan (2nd pic) I gave up half way and finished bacon in a cast iron pan with no issues. This will be my last update since I put the pan in trash can. I might as well threw away $100 bill. (3rd pic)

I have not yet seasoned this pan to begin the non-stick process, so my review is with that exception. The quality of this pan is clear as soon as you open the box. It just looks expensive and the finish on the inside of the pan looks like it is made out of something special and it might sound funny, but the finish is almost silky looking and feeling. The pan does still have some weight to it, especially for a smaller size skillet, however, in comparison to a cast-iron skillet, it is lighter. As all of the features and details of this pan are already listed in the product description, I won’t waste time listing them again here, but I will talk about my favorite aspects and what enticed me to order this pan. First, the KitchenAid name is not just a well-known household name, it's also known for producing quality products. So, it was an easy choice to order this when I saw that it was available. I like that this item has all the benefits of a cast-iron skillet, but the technology used to make it prevents it from rusting when it comes into contact with water. It's also bit lighter than traditional cast iron and this pan works on all cooking services, which is important to me as I have a convection stove top. I also really like the fact that you can use this item on your stove top, or under the broiler and you can even take it out to use on your barbecue. While I'm not sure that I'll ever use this on my barbecue, I definitely like having the option and the versatility. Finally, I love that this pan is metal utensil safe, which means that unlike pans with a non-stick coating, you can actually use metal utensils on this pan without the fear of damaging it. That is actually a huge selling point for me as I try to do what I can to treat my body well and that includes tossing non-stick pans when I see the coating starting to fail, even if it’s just a small spot. This is because once that barrier is breached, it's even easier for the coating to deteriorate by flaking away and that includes getting into your food and that's really not good for you. So, there are many reasons to purchase this pan and I’ve listed only a few of them. I think that this pan looks and feels like it’s a much more expensive pan than it actually is, and that coupled with all of the features makes it an excellent value. So, as of now, I have only good things to say about this pan and I would recommend it anyone who is looking to try an alternative to cast iron, especially if you have had to deal with your cast iron pan getting rust on it.
