Exceptional in Finish and Function
machine; the first one is self contained, mixes and then spits out the pasta; it is good, but not nearly as good as this one. Everything about this attachment is top notch. It is very well made — sturdy and solid; the parts all fit each other well and the fit on my very old Kitchen Aid is perfect. I am very impressed with the extrusion dies; they are very well thought out and made; some are two layers, some are 3; all work very well. The dies fit in a very nice tube that keeps the parts together and separates the different choices so one does not have to search to put the right pieces together. The drive train is strong. The pasta trimmer at the end works perfectly; on other machines I’ve had to use a kitchen knife and it is clumsy The instructions for putting the attachment together, attaching it to the Kitchen Aid, and detaching and cleaning it are excellent. Here are some thoughts I have about using these types of machines: First, they only work if you get the dough consistency right; too wet and the pieces stick together; too dry and they may not extrude. The kit comes with two basic recipes — that’s a bit sparse and I wish they had more variety; I’ll experiment a bit to get it right. Truth be told, I messed up on my first attempt. I was trying to make a half recipe and was fine until I put in the full recipe’s quotient of water. I tried hard to rescue the dough by adding flour — but really didn’t get it right. It was too moist and sticky — when I have been successful with other extruders the dough was a little shaggy or grainy not tight and moist; I’ll get it right next time. Second, I’ve used two ways to clean the dies, soaking them in hot soapy water and then using a toothpick or brush to pull the dough out OR freezing them, and then tapping them on a counter to get the dough out; the second way works best most of the time. All in all, this is a very good product and I could not be more pleased with it. I highly recommend it.

Good pasta results, but quality control and safety details fall short
I’ve used this pasta press attachment a few times now, and overall it does a good job making fresh pasta at home. It attaches to the stand mixer securely and produces consistent pasta shapes once the dough is at the right texture. The selection of pasta disks is a nice feature and gives plenty of options for different styles.The stainless steel disks themselves look good and are clearly engraved with the pasta type (such as large macaroni, etc.), which is very helpful when switching between inserts. That said, while the disks are stainless steel, the finishing on them is not great. The cut edges are not smooth, and if you run your fingers along the inserts you can feel noticeable roughness. This isn’t something you expect from parts that need to be handled often, especially during cleaning.The cutter is another weak point. The wire sticks out, and the ends are exposed. It feels sharp enough to scratch or cut your hand if you’re not careful. This is especially concerning when washing or assembling the attachment, and it really should have been designed with better safety in mind.There are also a lot of plastic components, which makes the attachment feel lighter and less heavy-duty than expected for a “gourmet” pasta press. While everything works, it doesn’t give the confidence of long-term durability.For the price, you’re getting a functional tool that expands your mixer’s capabilities and can make great-looking pasta at home.
