If working with whetstones is not your thing, a pull-through knife sharpener can be a valuable kitchen buddy. Electric knife sharpeners can be bulky, and I have found that sharpeners using rotating wheels offer inconsistent results.Multistage knife sharpeners work in steps,pically involving three slots or stages:*Coarse Stage*: The first slot is usually the coarse stage. This stage shaves off part of the knife, creating a fresh edge.*Sharpening Stage*: The subsequent stages shape the knife. These stages often use finer grit materials to refine the edge and remove any burrs created in the first stage.*Honing Stage*: The final stage is often a honing or polishing stage, which polishes the edge to a smooth finish.To use a multistage sharpener, begin with the coarse slot (assuming the knife needs more than just a touch-up or honing). Insert the knife into the slot closest to the heel and pull the knife smoothly through the slot towards yourself, exerting slight pressure and lifting the handle as you approach the tip to follow the contour of the blade. Each pull should only be 1 or 2 seconds. Repeat until a burr is raised along the edge of the blade. Move next to the fine grit slot and repeat until the blade is smooth and has a sharp edge. Clean the blade with mild soap and water and wipe dry to remove any residual metal filings.The advantage of multistage sharpeners is that you don’t have to deal with the hassle of knowing how to accurately angle the knife edge for sharpening. A common disadvantage is that the honing slot rarely leaves the blade as sharp as one would desire. This was no exception here. I found that finishing up with a steel was necessary. That said, this three stage sharpener made quick work of some kitchen knives that needed a thorough rework, and the honing stage left very little for the steel to do to bring the edge to perfection.Overall, this sharpener does what it sets out to do, and does so very competently. It is solid, sturdy, well-constructed, and stable. For me, it fills a niche in my kitchen.
It struggles with heavier-duty knives, which might be a dealbreaker for some users. Overall, it's a decent choice for those with standard kitchen cutlery and a tight budget, but professional chefs or serious home cooks might want to invest in something sturdier.
