So happy I got this! It works like a charm. I even used it on a rusty pair of gardening shears. I had to cut a small branch and my old & decrepit shears was handy. My others has gone missing, so I grabbed this. It sharpened it enough to cut the branch. They weren't like new again. That would be impossible. They were rusty, after all. But they did the job!

I really the EdgeMate sharpener and that it shows the correct angles needed for the various kitchen knives. The sharpener is also designed to handle garden tools but I'm only going to concentrate on kitchen knives. I like that the cartridges can slide into sharpener's handle for storage, so they won't get separated.Different knife types would use a different angle or colored sharpening cartridge. Before talking about sharpening, you should understand honing. Use a honing rod to align your blades first. A frequently honed knife will last much longer and keep the blade sharp without removing metal which is what sharpening does. Sharpening can be destructive to the knife while honing is not as it simply realigns and shapes the blade to keep the edge sharp. Both the honing steel and sharpeners are essential tools. Your Edge-Mate tool also has a honing element and that is on the deburr tool which is the black cartridge.What you are using the knife for will dictate the type of knife you should be using (European/American or Japanese) and the angle in which it should be sharpened. When cutting or deboning various types of meat and cutting fibrous vegetables, you would normally opt for the European/American knife which in general has a 20-to-23-degree facet or 45-degree overall angle. This would use the red 45-degree anvil cartridge.Less fibrous vegetables and seafood respond better to the Japanese edge with a 15-degree facet or 30-degree angle. Use the 30-degree anvil or yellow cartridge for these types of knives.Meat cleavers can have their blades badly damaged if you cut bone with a very sharp blade. For those you'll use the 50-degree anvil or turquoise cartridge.Your bread knife is usually serrated on one side and the other side will be flat. Note your 23-degree bypass cartridge which is dark blue in color and that one side is flat and the other is angled. You want the flat side of your bread knife up against the flat edge of the cartridge.Scissors are also an important kitchen tool. I probably use scissors in the kitchen even more than anything else. I'll opt for scissors to fold and butch up herbs that are then cut with a scissor over chopping them with a knife. Scissors would use the 35-degree bypass cartridge which is purple.

This little blade sharpener comes with everything you need.The different cartridges all fit nicely into a cassette, which stores inside the handle of the sharpener -keeping everything together and organized. Additionally, the handle has a color-coded guide making it clear which cartridge is for which type of blade.The included cartridges are shown in one of the pictures I included, but a brief rundown of what this thing can sharpen is as follows: Kitchen knives (all of them), pocketknives, pruners (various), loppers (various), boning knives, meat cleavers, serrated bread knives, scissors (both fine and coarse), grass shears, hedge shears... and it comes with a deburr tool.But what good is all that unless it actually works, right? Well, I can say it absolutely does work... at least on kitchen knives. I have a 20-year-old set of Henckels, and I use the chef's knife every day. I haven't sharpened it in quite some time, and it had become pretty dull, so I ran it through this thing for a total of three passes. It was so sharp when it came out that I could once again slice through an overripe tomato with zero issue.The packaging doesn't come with detailed instructions of exactly how you use it, but there is a handy dandy QR code on the bottom left of the back of the package that, when scanned, brings you directly and conveniently to a 90-second instructional video, which will show you how to use it correctly. I highly recommend doing so.I'm going to try the different blades on all the cutting things in the house. I'm oddly excited.

Said the blank blade slides out and to slide in blade that you want to use but it does not slide out. Totally worthless. Do not buy.

Sharpens Safely, Simply, and Swiftly
I see already that our first Edge Mate Pro 7-in-1 Handheld Sharpener for Knives, Shears, Pruners, Cleavers and more won't be our only one - my wife has claimed this one for the kitchen, but we also need one for the tool shed, another for camping, and I might just tuck one away in the emergency kit. It's worth every penny to be able to sharpen virtually any edged tool or utensil (except saws) and we can do it in seconds with this, safely and with a minimum of fuss. The sharpener is operated manually by stroking the edge with the right sharpening cassette - no power is needed. The sharpening cassettes store conveniently in the handle so it's quick and easy to set up for any edge type, and the color-coded inserts are identified by application right on the handle, so my wife and I can use it easily. I have a big need to sharpen dozens of various abused cutting tools. From kitchen knives to garden pruners to sewing scissors. Some things I buy second hand for a very low price while others get ruined by family members and improper use. I've literally had to put a lock on my tailor's shears.I love that the inserts are so versatile and that they're all stored right from a drop down in the handle. It works extremely well at sharpening all kinds of knives from a huge butcher knife to a very thin filet knife. I've worn out so many knife sharpeners but this is one that I can see lasting for a super long time. I do hope that I will be able to purchase replacement cartridges. If that becomes an option at a later time, I'll definitely keep this set for the rest of my life.
