This is my third Kyoku kitchen knife and just like the other two it's a joy to use and beautiful to look at. This boning knife is a perfect size for cutting vegetables and meat. The edge is razor sharp and because it's made from 1.4116 stainless steel hardened to 56 HRC, it should keep the edge for a long time and resist corrosion. I use a roller knife sharpener on my other Kyokus once or twice a month and they are always sharp and ready to cut. The handles have an elegant design and are comfortable to hold. Lastly, the packaging is stunning and includes a sheath in case your store these in a drawer (mine are on a vertical, magnetic board where they can be appreciated).
