SHARP! SHARP! SHARP!When I received my Kyoto knife set I was pleasantly surprised by the aesthetic of the container itself. An array of deep black stenciled flowers surrounding a gilded Japanese logo against a charcoal background. Simple, yet elegant. Removing the lid revealed an appreciation card atop a cushiony foam protective top layer which I would later discover was aiding in sandwiching the knives that lay beneath in a swaddling protective layer. The knives beneath the top cushion were protected even further by being nestled in foam cut to their precise dimensions. After lifting the custom cut foam from the top, the knives were revealed, yet still protected within a plastic sheath.Removing the knives from their cocoon I noticed each had a plastic bumper affixed to the tip and heel of each knife. I mistakenly assumed this was to protect the knives from damage. I now believe my assumption to be wrong. I was anxious to feel the weight and balance of each knife, so I began to pick each of them up one by one while they were still in the protective plastic and still had guards on the tips and heels.CUT #1: I'm not exactly sure how it happened but I believe I might have been a bit too dependent on the plastic sheath. As I was gently handling the knives I must have inadvertently grabbed a knife within the plastic by the blade side. SLICE. I was cut by the knife through the plastic. Not terribly deep, but their sharpness got my attention... or so thought.Personally, I only cook at home, for my wife and near adult daughter. I am not a professional chef, ironically, two of my good friends are chefs. That being said, I have never own knives of this quality, so it would be unfair to grade my daily knives against these luxury knives. I was struggling for awhile with these being called Japanese knives. It struck me as weird because knives do not have an ethnicity. However, as I was pondering that terminology a commercial came on TV in the background and I heard them say "We service German vehicles". So if a car can be German, then I guess a knife can be Japanese.I digress, after placing a bandage on my freshly sliced finger, I continues my assessment. The balance was near perfect. The weight distribution employed was unfamiliar to me, but as I handled the knives more it started to make sense ergonomically. The weight of each knife's entirety was comfortable. It is abundantly clear when handling these knives they are intended for precision. I am not a chef and I do not focus heavily on presentation, but if I did, these would be the tools to use.I have included photos of each knife and their weight respectively. Also to mention, these knives come with a sheath each. I included a video of the chef's knife cutting through partially frozen bone-in chicken breast. The knife had no problem but I did. I was afraid of the knife so I essentially was staying as far away as I could from it which cause me to use improper form while making the cut which impacted the smoothness of the cut.I am afraid to use these knives too often and dull the blades. How could I ever return them to their original sharpness. I think these will go in my china display cabinet and may come out on special occasions.These knives are TOO GOOD for me. They are superbly crafted and extremely handsome. They are certainly in the BIFL category. I am going to skip revealing my second cut.SUPER SHARP!I am pleased!
Holy cow, this is an impressive Japanese knife set! They are works of art really. With 3 knives included, you have all the functionality you need to carve up just about any piece of meat you can imagine in the kitchen.All 3 are fairly big, they have a nice weight to them and the handles are very ergonomic and easy to grip (even when your hands are damp). They are sharp beyond belief, so you will want to take great care when using these knives.They aren't the cheapest knives you'll ever find, but if you like to cook and carve meats, you won't regret this purchase. They are so well made, they are likely the only knives of their kind that you will ever need. Even the box they come in is impressive. It'll feel like you're unboxing an iPhone or something.
I decided to get this set of knives since I liked to clean design and Damascus pattern. The set included a slicer, a scimitar and a boning knife, which are all types of knives that are used for breaking down different types of meat. The knives are made of VG10 67 Layer Damascus Steel and have silver ion protection. The knives have a 58 to 60 HRC which is a good hardness for both durability and precision. The knives are all very sharp out of the box and have a good weight to them. I found the knives easy to use since they are both sharp and have a comfortable handle. I also like that a mosaic metal pin was used in the handle made of G10. Another feature of these knives is the full tang design which means the metal of the knife blade extends all the way through the handle making it very durable. For the 3 knives I would say they are well worth the price.Overall each knife is well crafted, they have a nice overall design and come out of the box sharp.
