Works well
This is the only shrimp deveining tool I’ve ever used, so I have no basis for comparison against others. I purchased this one after reading a lot of reviews on this and other deveining tools that Amazon offers. I have used it to clean some finger-sized Alaskan spot shrimp, and it did the job very well. It cut through the shells easily and butterflied the shrimp nicely while clearing out the poo vein in one go. It is easy to use and easy to clean, and it seems sturdy. I expect that it will last a long time with proper care.

So easy to use, and works perfectly!
I've always used a sharp paring knife to clean shrimp, and never thought I'd need another gadget, until my daughter raved about a shrimp deveiner she received as a shower gift. In my search for which one to buy, I saw that this product resembled a knife, so I could use it the way I was accustomed to. I decided to try it, and I'm very happy I did. The tip comes to a sharp point and is angled just right to slice and remove the outside vein, and the inside nerve, in just one swipe. This is so easy to use, takes up so little space in the drawer, and is such a time saver. I wish I'd found this gadget sooner, but I'm happy that I finally have it now!

BEST SHRIMP CLEANING KNIFE, but it could be better...
To understand how this knife works, it's necessary to understand how a shrimp needs to be cleaned. There are THREE (3) areas of a shrimp that need to be cleaned after its head is removed: #1 and most obvious, is the shell. The other two items are the shrimp's digestive tract (containing feces, running along the outer backside of the shrimp, usually black in color and erroneously referred to as the "vein"), and the actual vein which runs along the shrimp's underbelly (thin and usually red, white, or purple in color). This is the part of the shrimp many people eat even though it turns rubbery upon cooking. This knife is the perfect tool to use to "butterfly" a shrimp, which means to remove both the front vein and back intestinal tract simultaneously with the shell. This is the ONLY knife sold that has a cutting edge on both sides of the knife with the concavely curved inner blade cutting along the shrimp's back while the other convex side, simultaneously cuts through the shell. This same latter side, can then be used to cut open the underbelly of the shrimp to expose (and remove) its actual "vein." When cut and cleaned in this manner, the resulting shrimp resembles a butterfly. Unfortunately, although this is the sharpest knife on the market, both edges can be made MUCH sharper to do the job easier. I believe they are not sold VERY sharp to reduce consumer injury as once both sides of this blade are sharpened razor-sharp, the knife can be quite dangerous. Also, due to the inside (concave) curvature of the blade, it's very difficult to sharpen, but if you're willing to spend the money, I've found a motorized "Work Sharp Knife and Tool Sharpener" to be quite effective but you must be very careful when doing so since it's a power tool and the tip of this knife is very delicate and easily broken if you don't exert great care. This knife, like all knives, requires periodic sharpening to maintain effectiveness, so the tool that sharpens a concavely curved blade is essential to keeping this knife sharp. This is the best place to start since all other knives are VERY DULL compared to this one. So the bottom line is, buy this knife but know you'll have to sharpen both edges to get the full potential out of this fine kitchen tool.
