The cutter itself is of high-quality materials but when I had an issue they had a new on in my hands the very next day. I was so impressed by the product and the service I will suggest them to all.

Once a week, I go by and pick up perfectly good surplus food the grocery store gives away. It's great to keep that food from winding up in the landfill, and it's free, but there's usually a preponderance of just a few things. Ten bags of apples to can or dehydrate. Twenty flats of tomatoes. Potatoes out the kazoo. I mean, restaurant-level amounts of food that most families are not going to be able to deal with.This year I've learned how to preserve foods in any number of ways, but most of those methods involve chopping up all those fruits and vegetables, which can be a bit much for one person. And then you have to process it all! Homesteaders know exactly what I'm talking about, because they have to deal with this kind of overabundance from their gardens at certain times of the year.I cannot tell you how much I love this "lemon cutter." It's so much more than that. It's not so unwieldy and difficult to maintain as one of the more sophisticated commercial food choppers with swappable parts, but it's versatile and big enough to make short work of a lot of food in a hurry. I find that if I clean it right after use using the included brush and the sink sprayer, I don't have to unscrew the blade. Then I just let it dry and put it away.I was intending to just use this to sit down in my farmhouse-style stainless steel sink; plug the sink, add water with vinegar or lemon juice to keep the chopped veggies or fruits from turning brown, and then chop chop chop until I have enough to fill up my blanching pot or dehydrator. But then I discovered how beautifully this thing sits in my big stainless steel bowl!I don't remember where I got these bowls, but I have two of them that I've had for decades. I think they're probably 4 quarts. They have an inner diameter at the lip of 11" and then a little ledge-like part just below it. The rubber feet of the Ezcasch cutter sit perfectly on that ledge and do not slip at all when the cutter is in use. So I can do smaller amounts of food (yet still quite a lot) without having to tie up my whole sink to do it. A dining room table is the perfect height for doing this work. I can cut veggies to fall into acidified water to keep them from turning brown, then drain and/or dump the whole thing into a big pot to process. This is going to save me many, many hours or work and also help me cut my foods up uniformly. The sharp little spike at the center of the cutter blades holds whatever you're cutting firmly.I've seen a few videos where people are pounding down on the black top handle repeatedly to get their veggies and fruits to cut all the way through. I did my first experiments with a bag of decidedly old, drying out lemons, and I found that there is a trick to getting a good, clean, rapid cut. Lift the cutter fairly high above the blade, then bring it down with CONFIDENCE, allowing the weight of the pusher to do most of the work. With those dry lemons, it only took two times to cut all the way through, but only because the skin at the very top was so dry and shriveled. An apple cuts right through. You just have to have it in your mind that you are the master and the item being cut is going to yield to your will. Mind over matter! Once you get the feel for this, it's a snap to chop up a lot at once.My only regret is that I don't see any way of getting replacement blades for this. The cutter comes with two eight-wedge cutters, though, and I don't think you'll very quickly wear this out. I have not yet tried to dehydrate the slices without cutting them down further, but in the interest of expediency I might have to do that and see what happens. But for canning? This is the bomb!
I worked in a restaurant many years ago and used one of these devices on a regular basis for cutting lemons and tomatoes. This works just the same. I put a lemon in and a glass custard dish below and gave it a few good pushes and it cut the lemon perfectly. I store this in the box it came in since it is very sharp and to keep the dust off. It comes with an extra blade, cleaning brush, and a peeler- which I haven't tried out yet. Anyone that is looking to have professional grade tools for food preparation would make good use of this.
Extremely well made and heavy duty. I used this during canning season to cut up apples and it really made it go so much faster. Easily cleans and comes apart for storage. I will be using this for years. Easy to operate.
