Love these dough containers!

These pizza dough containers turned out even better than I expected. They’re airtight, the dough stays soft, and it doesn’t pick up any fridge smells at all. Great kitchen find!

I bought these to store my pizza dough while it proofs, and they’re perfect! The size is just right, the lids snap on tightly, and I love that the lids double as dough cutters — super convenient. Great for refrigerated pizza doughs

I kinda have mixed feelings about these proofing containers. They are made very well with high quality silicone and the lid seems to keep an airtight seal but I haven't tried these in a refrigerated ferment as my dough is same day 8-hour ferment at room temperature. I do a 2 hour bulk fermentation so my dough stayed in these for 6 hours or a little more and never had any drying out and seemed to keep a really nice seal. One problem is if you make higher hydration dough for a home oven like I do (70%), then you will need to be careful removing your dough balls. Placing a little flour around the dough ball will help it release more easily but you still will need to be careful or it will stick to your hand. I don't think this would be as much a problem with lower hydration doughs that aren't as sticky but I only make the higher hydration since I don't have a pizza oven. You will also want to control your temperatures with these as well, if it gets too warm and the dough rises more it will stick to the top. If this happens, just gently pull the lid away from the dough very slowly and it will release without tearing the dough but you may have a couple wrinkles but nothing too bad.I understand the main purpose of these containers are for refrigerated dough like 24-48 hour ferments and these would work perfect for that purpose other than maybe the issue of removing the dough ball. But using a normal pizza proofing box still requires you to be careful removing the dough balls without damaging the dough but these are quite a bit harder and I would only recommend once you have some experience with pizza dough. If you don't care about the air pockets in your dough then removing them would not be an issue at all since you could just turn them out but I like my crust to bubble up with air pockets personally. The lid does double as a cutter and scrapper as well but it is not very thick and I wouldn't recommend using it for that purpose other than maybe to help scrap up bench flour while working (It is very handy for that purpose but I would be very careful with it). Overall, my experience with a same day dough was great with these but I think I'll stick with my proofing box for my needs however. If you make refrigerated pizza doughs then I would highly recommend these, otherwise I'd stick with proofing boxes.
