Starts sharp, stays sharp.

I never had a Santoku before getting a 5” one in a set a while back. Immediately liked the type, but not the short size. Wanted an 8 over a 7 and found this one. Read the reviews and bought one. Perfect weight (for me anyway) with great balance and feels very natural in the hand. Razor sharp out of the box. Been using it daily, my go to knife, for nearly 3 weeks and have not needed more than 1 or 2 dressing passes over a steel, which is something that must be done with any share knife you own. Had some large grapes in the fridge so I took 1, tossed it in the air, and swung the knife at it like a samurai. (***DISCLAIMER: This can be very dangerous as this knife is razor sharp. Just because I did it doesn’t mean you should. If fact, since I have done it, you don’t need to***) I got lucky and caught it dead center on the first try and it cut through so cleanly the 2 pieces were not batted across the room but fell straight down on the board looking like a surgeon cut it with a scalpel. I’ve now gone back to read some of the 1- and 2-star reviews. If you know how to properly use and care for a knife of this type, you will likely not get any of those 1- & 2-star thoughts in your head.

Greatest knife EVER!!!

I have owned many knives in my lifetime. So let me tell this is the best I've ever purchased. It is so sharp and easy to use because of it's sharpness. Sliced like going through butter. Sleek design, handles well, perfect size, and he doesn't make my hands hurt just trying to cut something! I'm buying them for Christmas presents this year. Do yourself a favor and buy some.
