Works pretty well & easy to clean. The only real complaint I have is that the c-clamp that holds the unit down, is positioned so that the handle hits it with every revolution, which is pretty irritating. This is my first sausage stuffer, and while it’s not the fault of the stuffer itself, it’s clear to me that a vertical stuffer would be FAR MORE user friendly. I’ll be ordering one of those, soon.
Mostly robust, with a couple of concerning parts …I make South African droëwors (dry sausage) in the Winter. I wash and grind my own meat. Since I air dry my sausage I can’t trust ground meat from butcher or supermarket which may be contaminated through shoddy butchering and processing. I concur with Master Feng’s “Homemade Is Healthier” trademark. I stuff my own sausage. My old, robust brand name stuffer is vertical and forces the meat through a right angle at the base which requires a lot of winding force to extrude the content. I decided to try this horizontal stuffer because the meat is forced out in a straight line. I haven’t used it yet, the weather up here in the PNW is way too hot this Summer, so my comments are based on visual inspection. The unit needs to be clamped down, close to a corner edge. Clamps are provided. Why a corner? Firstly because of the crank handle needs to hang over an edge and secondly because the barrel swings up vertically to be loaded — and for this you need another edge at a right angle to the first i.e. a corner. The base of this stuffer is very narrow and will easily tip, so clamping needs to be hard and secure. The quality of collar which secures the funnel to the barrel is not of the same quality as the rest of the build. It’s metal, but feels like plastic. There’s a thin silicone washer inside the collar which falls out and can easily be lost or washed away. No spare washers are included. Several funnel sizes are included. I’m looking forward to using it this Winter, but I am not completely enamoured with the product, but at the price it’s worth a try.
Yes I used the standard clamp first that came with the unit….absolute trash piece of equipment.I initially used it as instructed with the biggest casing holder yet it binds up when you start to try and push the meat out…As you can see I even tried to mount into onto a 2x4 and still it warped.
seem to flex a lot
I relatively recently began learning the art of sausage making with the initial goal of making homemade bratwurst and ultimately branching out into other kinds of sausage tailored specifically to my taste. I knew going in that some specialty equipment was going to be required. Initially I thought that would simply be a metal meat grinder with attachable sausage tubes. However, upon watching a few videos of experienced sausage makers struggling to stuff casings using a stand mixer with a meat grinder attachment, I saw the wisdom of adding an additional piece of equipment. So in the interest of not starting out behind the 8 ball, I decided to invest in a sausage stuffer. As with much in the world of kitchen equipment, there is a range of sizes and costs for stuffers. The goal for casual hobbyists like myself is to find a good balance of price and quality, namely something sturdy enough to do the job at a price that doesn't break the bank.I landed on this model and found it to strike that perfect balance. Nearly every part of the stuffer is metal and since it touches food I was glad to have something nonporous that I could effectively clean. The plunger, a gear driven mechanism which pushes the sausage mixture out of the stuffer body, is also metal and very durable. Since it is metal on metal, as I read in another review, I applied a thin coating of food grade grease to the teeth prior to using it. This makes for a smoother action and also prevents any metal shavings that might occur due to friction. I also applied a thin film of the same grease to the screw clamp at the funnel end for smoother operation. This stuffer comes with 4 different size plastic tubes to fit the size casings you are stuffing. One really nice feature of this stuffer is that it attaches horizontally to a tabletop or countertop with the extruded sausage coming out close to the table or counter surface. Compared to a mixer attachment which is likely a foot or more above the countertop, this is only a few inches, enough fit a rimmed baking sheet beneath it. Pro tip: apply a light film of oil (baking spray or cooking oil) on the tray and the sausage will slide across making it easy to coil and preventing kinks. The body can be detatched from the base at either or both ends: releasing the open end allows for easy filling and when it's time for cleanup the piston can be removed leaving the empty cylinder which can be easily rinsed and scrubbed. It can also be completely separated from the base for easy cleaning in a sink.I also have a smaller vertical version from this same manufacturer and the quality is consistently good. For working with smaller amounts of sausage mixture the smaller stuffer works well, but in the interest of not having to reload for larger quantities this stuff has over twice the capacity. In the end, you want the challenging part of sausage making to be recipe formulation, not grinding or stuffing. With a purpose built stuffer you fill the barrel with your sausage mixture and stuff all at once. If you're attempting to do this "one man band" style, not having to constantly feed the grinder while attending to the stuffing side makes the process fun rather than frustrating.
