Lovely, functional knife.
This is a lovely knife. The weight feels good in your hand. Im not sure if I got a new or old version of this knife, but the small details in the handle are different. It's not a deal breaker by any means still functional still beautiful just slightly misleading with the pictures. For the price of this knife you cant go wrong, I've been using this brand for years in and out of professional kitchens and they hold up well. Only time will tell with this one. My only complaint is it could be a bit sharper right out of the box.

Hello, line cook here. To put this simply, the weight of this knife makes it nimble and great for precision cuts or a quick chop. The curved bolster and rounded spine/heel put the comfort on a whole other level, at a 15 degree angle it's scalpel sharp and a pleasure to use, do be careful though, the HRC of this steel is 62 so do use caution if you're cutting through tougher foods (no frozen items or thick bones, use wood cutting boards etc.). Overall, the Damascus pattern is badass and out of the box or not, a couple passes on ceramic (or the fine section of a pull through sharpener) will give you the kind of sharpness you see in viral videos online.

A Great Little Knife
Mercer knives are inexpensive knives that feel like a more expensive knife. The smaller size fits comfortably in a smaller hand but feels a little light. Although they can be washed in a dishwasher on the top shelf, they are easy to clean by hand and will keep their sharp edge if wiped with a damp sponge.

I'm one of those weirdos who don't do much cooking but just love collecting all kinds of chef knives. I mostly admire their craftsmanship and all the technical aspects involved in their design & fabrication. I've gifted my younger brother, who has a catering business, with many expensive knives (Wusthof Classic, Global-G2, and other cheaper ones like Mercer Renaissance, and several other cheap Japanese-style knives, etc.). I'm so addicted to buying chef knives that I now prefer to watch YouTube videos of chef knife reviews, rather than watch new Netflix movies.I also like Mercer knives so much because of their high quality-to-price ratio, comfortable handle, and fabulous balance. So, I just ordered my 3rd Mercer (this time a 6-inch instead of my usual 8-inch) after giving my second one to a friend. Mercer knives are very similar to Wusthofs in terms of quality, but lighter, just as sharp and easy to sharpen, and very comfortable to hold.But this leaf-patterned, 8-inch Mercer knife is different from my other Mercers bec. it looks just like it does in the photo--stunningly beautiful like a museum piece. So, I don't feel like using it too often because I'm afraid I might scratch it and ruin its unearthly beauty. Also, I already have 10 knives of my own, so I don't really need to use it.Unfortunately, this knife has to be the most incredibly comfortable knife that I have when it comes to hand feel. I don't feel any sharp edges biting into my hand at all. Everything just feels so smooth and extremely pleasing to hold and yet not slippery at all. You simply forget you're holding a knife.Just like my other Mercer, Global, and Wusthof knives, this leaf-patterned knife is extremely sharp out of the box.The only thing is it's feels weighty very much like my Wusthof Classic 8-inch, so I'll just have to get used to it after having used my extremely light Japanese knives for a while now. This one will be used for more demanding jobs, like cutting meat and tough to cut veggies & fruits.I'm so pleased with this purchase, I feel like ordering another one just for safekeeping in case my other Mercer Leaf-Patterned Chef Knife got a scratch, and before the price goes up, which is often the case with chef knives that become popular later on. I don't like it when my knives get scratches (but all my chef knives of different metal types are easy to polish using the green side of a dry Scotch Brite pad)I'm pretty stoked with this purchase. Now, I just need to earn more money, so I can build up my chef knife collection.

I work as a prep cook in a pretty busy kitchen, and needed a new chef knife. Instead of dropping 100+ dollars, I decided to take a bit of a chance on this "budget" Mercer. I like and trust the Mercer brand, and honestly, this knife is no different from others in the brand that I've used before.I bought the octagonal handle (preference) and it feels good in the hand, with the weight of the knife more forward. The steel is beautiful, and the blade and handle are easy to keep clean. Super sharp out-of-the-box, and has stayed that way so far after a few weeks of use with only light sharpening required.The ONLY thing that I would like in this knife is if it had indentations along the sides of the blade, like most Santoku, to prevent food sticking while slicing and dicing, but I knew that when I purchased it...I got this knife for about $60, and so far it has definitely been worth it 👌
