A great German-quality carving knife, at a great price point
This is a great carving knife. I bought it to carve Thanksgiving turkey, and have been trying it out in various other slicing/carving applications over the last few weeks to get a feel for it.The knife is well balanced, it is comfortable to hold (similar in feel to the Wusthof Grand Prix II series, whose style it evokes quite closely), and the blade width and Granton edge keep friction to a minimum. It is just as sharp as my freshly whestone-sharpened Wusthof Classics (which is to say, scary sharp). Of course, only time will tell how well it holds its edge, but so far I think it's done quite well.The handle is made of a slightly softer and grippier material than the Victorinox/Forschner Fibrox handles (and it's definitely softer and grippier than the Wusthof Grand Prix II handle). Personally, I'm not that particular about the handle material, and I think they all feel pretty nice, although some may prefer a firmer or a more traditional-appearing handle material (and others will prefer this one). I think the overall look of the knife is quite pretty; it was clearly designed to evoke images of its German cousins.Overall, I would say this is a great knife (and a great value) from a presently lesser-known manufacturer, and one that would make me consider the Mercer Genesis line again for future needs.

Very good knife, needed a little help with sharpness.
This is a very good knife, good steel, feels good in the hand, It will compete against the more expensive German brands. One word of warning, mine was not sharp when it arrived, but I found that it simply had a burr left from the initial sharpening. A few swipes with a steel removed the burr and it was very sharp. The quality control may not be as good as a knife that costs 3x as much.

Great Knife!
I use it primarily for slicing raw fish, I use it to create portions, as a Suji knife, but the cost is awesome conpared to Japanese Sujis. I'll use my Mercer Yanagi to thin slice sashimi. Great value, razor sharp out of the box, however I needed to run it on a 6000 wet stone to smooth it out. Love this knife, all Mercer knives rock! No question. I'd buy this again! If you work in a sushi bar, this knife will go up against any Japanese sujis for sure, at half the cost!

Very sharp indeed
Excellent, and VERY sharp! I accidentally just brushed two fingertips near the hilt, and it instantly cut me without any pressure. It is very sharp and well balanced. It has the heft and feel of a high quality carving knife. Right now, I am nursing two deep nicks, but that was a result of my carelessness. As soon as I use it for real I will update my review.
