Really excellent pair of Mercer-designed knives! Another feather in Mercer's cap!
I am a professional Home and Personal Chef and teach cooking and knife skills as well. Knives for me are essential in my culinary toolbox and culinary activities. I am picky and critical. I have tested, evaluated, and reviewed MANY tens of culinary knives and sets here on Amazon and elsewhere. I will praise those that deserve it and am highly critical of those that aren't. What is most important to me is that the knives I use and rate highly are for "cooking”…not "looking". Performance, construction, and ergonomics are the key metrics over aesthetics for honest critical analysis and review. Brand and price are not metrics.This set of a Chef's knife and a Paring knife is a classic example of the precision and design excellence that I have experienced with all of the Mercer knives I have tested, reviewed, and own. This set is no exception!The 8" Chef's knife is a cross between a traditionally styled European chef's knife and the Japanese Kiritsuke style chef knife, with a strongly angled drop from the spine to the tip. This classic Japanese format provides for precision slicing at the tip, unlike the more rounded European style. The knife, overall, is highly functional for any of the normal cutting, chopping, trimming, and dicing that Chefs are constantly doing on a daily basis.🟢 The construction is flawless. The G10 handle is very ergonomic and comfortable in hand, even for extended use. The handle is attached by a single rivet to the full-tang blade and further secured by a stainless steel end cap.🟢 The balance of the blade is perfect at the center of the bolster, providing a feeling of equal weight and balance between the handle and the blade. Overall weight is outstanding and imparts confidence.🟢 The bolster attaches to the blade with a gentle slope that is perfect for comfort and control for those who use the professional pinch-grip method of knife handling and control.🟢 The blade is sharpened to a now-standard 15° edge that will maintain well due to the 62 Rockwell hardness rating of the steel used for the blade.🟡 The Damascus-style laser etching on the surface of the blade is solely for aesthetics and serves no functional purpose.🟢 The paring knife's construction, material, and design match the bigger brother it comes with. Ergonomic in hand and perfect blade size for tight work. It is very comfortable to work with!Both knives come in presentation boxes with a polishing cloth and blade sleeve. Highly aesthetic, but for pros and experienced chefs, the more important metric is that they perform brilliantly, with the expectation of a very long life.As always...It is important to NEVER put proper cooking knives in a dishwasher. Always clean by hand with a bit of dish soap, and then rinse and dry immediately before storing. In storage, keep the blades from touching other blades to assure they stay as sharp as possible. Dull blades are dangerous.I couldn't be more pleased with this set and for me, it's clearly a HIGH FIVE STAR winner. I have no hesitation honestly and heartily recommending these two knives for your kitchen. The price is a VERY fair value for the quality and performance gained in the purchase. a tale of two knives
It was the best of knives, it was the worst of knivesMercer Culinary Premium Grade Super Steel 8-Inch Chef and 3.5-Inch Paring Knife Set would be a winner if it cost less and only included the chef knife. The Chef knife is sharp, well balanced, cuts cleanly, and I like it a lot. 5 starsThe paring knife is handle heavy, poorly balanced, and I don't care for it. It does cut well but the heavy handle leaving it so odd in the hand compared the blade just didn't work for me or my husband. We kept the chef knife and got rid of the paring knife.

This is a fantastic set of knives, and for the quality, an awesome value. I primarily ordered these to get a full set of quality Damascus knives, and I am really pleased with both their function and appearance. The quality is very evident all-around. The handles are comfortable to hold, and the knives are well-balanced, with very sharp blade edges.The glass block stand that comes with the set is very nice. It actually looks like a decorative piece on a kitchen counter top, proudly displaying the classic look of Damascus steel through the clear glass, while also protecting the knives. The glass and brushed metal look of the stand compliments several styles of kitchen décor, but especially Farmhouse or modern industrial styles.Every one of the knives actually come in their own separate boxes, which are quite nice in appearance. These could actually be given as separate gifts if desired. They look that nice, and very special in their appearance. But this set should be kept together with the glass block stand.Great set of knives and an awesome value for the quality.

This is a well made Damascus style steel from the company Mercer.These are higher end knives than usual low cost ones that you find in commercial kitchens and because of that reason they are more comfortable to use and have a ultra sharp edgeEach knife feels substantial and well-balanced.From the smallest paring knife to the largest chef's knife, each feels heavy in your hand. I like the solid grip and it’s easy to use.Right out of the box, each one has a really good, sharp blade.Testing on tomatoes, it was easy to slice and chop. I used it in lemons and onions and it went right through them. Because the blade is that sharp, it also felt safe to use. I didn’t have to put my fingers in harm’s way. I like the knives.

Good quality knives
This is a nice set of knives. You get an 8-inch knife and a 3.5-inch knife in this set. They come in nice separate boxes, with a suede-like lining. There is a polishing cloth included with each knife. The knives themselves look great. The blades on both knives are sharp out of the box, and you can see the Damascus steel pattern on them. The handles look nice, and they feel durable. Both knives are relatively heavy and sturdy and overall feel like well-made, quality knives. The manufacturer doesn't recommend putting them in a dishwasher, so make sure you handwash the knives. It's a great-looking knife set that would make an awesome gift or can be used by an aspiring chef in your kitchen. They are not cheap, but you get what you pay for. Overall, I am happy with these knives, and I recommend them.
