Commercial Pullman loaf bread pan
Very happy how this loaf pan came, cleans up easy and works great for making the sandwich style sourdough loaves, seems to be very sturdy and well made. Easy to use, the lid slides nicely. It is heavy duty and bakes my bread up nicely.

GREAT loaf pans.
Just wow.So let's talk value. You cannot beat these pans for what you pay.What was I looking for?Above all else, a SQUARE pan of a good size. These are long and very similar to the "store bought" loaf size. Loaves fit well into our plastic airtight bread boxes: Tiawudi 2 Pack Bread Box.These are above average quality and the coating is completely non stick. This makes baking and cleanup super fast and easy.They have a lid which slides on to make the entire loaf square.Highly recommended if you're looking for a good quality non stick loaf pan for a great value!

I bake organic sourdough bread frequently. This is by far, the best solution for baking bread for many reasons such as shape, cleanup, and convenience. So, first thing, you can put your bread in loaf pan without having to transfer it to another container to bake. It has a lid so it can be covered while rising and baking (if you wish). It makes perfectly formed loafs of bread and doesn't stick when removing it after baking. If you leave the lid on while rising, do not try to remove it before baking 30 minutes as it may stick to the dough. My recipe makes a full loaf and I leave the lid on for the first 30 minutes, then remove for 20 minutes to make my bread nice and square for toast. The edges come out great, not too dark or too crunchy like when you bake in a hot dutch over. The photos are of the first loaf I baked using this pan. I rub a small bit of butter into the corners of the pan before putting my dough in for rising. When the baking time was up, I removed the loaf pan from the oven and let it sit for about 2 minutes, then turned over the pan onto a cutting board and tapped the bottom of the pan, then lifted the pan off and the break slid right out. Nothing stuck and clean up was just simply washing the pan in soapy water and rising. My sourdough recipe is 950g of organic flour, 600g water, 25gACV, 75g olive oil, 28g sea salt, and sourdough starter. You can add 1 pkt of yeast if you want a quick rise.

Excellent pan for shokupan
This is an excellent pan for making shokupan. You get a nice nearly perfect 4.5” square slice if you use the lid and with it off you get a nice open top loaf. Dough weight will need to be around 1100 - 1200g for a yeasted loaf to fill the pan with the lid on. Around 1200g is perfect for an open top. Pan is sturdy and feels well constructed. Just wiped a thin layer of oil on the inside before popping in my dough. Loaf slid out perfectly when it was done. This one also is much better quality than some of the other similar versions and I really like the flat sides of this one over the corrugated versions.

Perfect results
Great results! Non stick that really works and there's three little vent holes in the bottom which gave beautiful crisp bottom crust result. The pan itself is 7 1/2 inches long measured at the bottom but because the sides are so tall I treated it like a full 9.5 sized loaf pan with perfect results for dough amount.I used my favorite enriched dough sandwich bread recipe but wasn't sure exactly how much dough to put in there and not sure how to use this pan during the rising.I did my second rise with lid on and noticed my dough coming out a bit at the top from between the slide on lid and the pan so I removed the lid because I'm chicken. I Did give a light spray with no stick oil stuff., again...chicken.Baked without adjusting my heat with the lid off which I'm happy that the dough didn't stick and my results are amazing.Love the straight up high sides and now I know how much dough to put in there.To anyone reading this, never put anything non stick in the dishwasher(goes for silicone scrapers too) because from dishwasher on the non stick is not what it should be or worse.Added two extra minutes on when baking because I'd used extra dough than my usual loaf pan recipe and as the photo shows, my results are amazing.The crust is a perfect golden on every side, my crumb was perfect and I'm tickled at the perfect straight up sides and the ridged textured ridges which give an extra crisp edge to my crust.For my recipe with 3 1/3 C flour I'd used a little more than half the dough created with enough dough left over to make 7 Parker House rolls if that helps to let you know how much dough I used.I forgot to weigh how much dough I'd used for my loaf.

Nice Pullman Pan with One Exception
As far as functionality, the pan works as described. It is easy to use and clean. The only issue I found is the size. It is a few inches longer than my other Pullman pans. I made my normal recipe for Sourdough sandwich bread and the loaf came out short. I will have to 1.5x my recipe for this new pan.
