Works well with the right pots
Purchased this to melt chocolate and icings in large batches to dribble over fresh baked pastries, as well as to keep my mocha hot throughout the day without scorching. Was hoping would fit the Instant Pot, which it does but sits a couple inches high inside the chamber. This means the IP60 can hold about 3L water around the NorPro; kinda inefficient to get any brew heated up in a hurry but at least no danger of the pot running dry during the day. Lower section of the NorPro fits perfectly in the Ecolution Pure Intentions Stainless Steel 2-Quart Saucepan also purchased here, and fits an old 3Q Tramontina dutch oven of mine to a T. Also kinda fits a relatively new SS T-Fal 3L, though a bit tricky to balance so as to keep level. Luckily though the glass lid of the T-F mates perfectly with the NorPro, quite a boon because this double boiler doesn't come with its own — perhaps typical of this style with [dripless!] pour spouts, but with such a large vessel would have been nice at least to have the option of buying a dedicated cover as an add-on. Not to mention but I also found that using a lid helps stabilze the balance, either when immersing the NorPro inside another vessel or standing it up on a counter solo.Concur with rest of reviewers as to the overall high quality of piece. Definitely the most sturdy and well polished of any double boiler I've ever had... perhaps even too good for my lousy cooking!Included are shots of various setups I tried using the NorPro with varying degrees of success. Please note that the glass lid pictured does not come with this double boiler and I have no idea where it might be purchased separately. It is by no means necessary for use, just convenient.

Excellent product
What a great quality kitchen product. It is heavy and made well. It actually fit perfectly on top of my 4.5 quart Calphalon pot and formed a tight seal with the double boiler. I used it for the first time at Thanksgiving to cook the chocolate pie filling. It heated up quickly and cooked my pie filling to perfection without sticking (of course frequent stirring is still required). I was thrilled with the performance of this double boiler. I hand washed and then dried it. I would not put any cookware made in (C) in the dishwasher.

I love the two sided pour spouts
This is very heavy and I feel it will work well for melting soap. I love the pour spout on both sides so you can pour from either side . It is also the perfect depth to hold a candy thermometer without it touching the bottom of the double boiler pan . Some double boiler pans are too shallow to use a candy thermometer .However, I question the dimension of the bottom pan this will fit. into . I tried it with an 8" top diameter bottom pan and the double boiler pan was "handle heavy" and tipped and slid around while sitting empty on the bottom pan . I tried it with a 6" top diameter bottom pan and it was stable while sitting empty on the pan . I did not try it with weight in the top.My 6" pan is 4" deep so the top double boiler pan doesn't touch the bottom which is perfect . The top of a double boiler should not touch the bottom of the lower pan. The hot water touching the top pan does the melting I would recommend this as long as you use it with a 6" diameter bottom pan

The Best Quality
I searched and searched for a good pot to use for my melted chocolate to keep down in my sous vide. I had returned two others that were too small. Finally, I decided it was the buy what you pay for thing and I went for this one... Boy was I happy. It is heavy duty, a beautiful quality of stainless steel, and super easy clean up. 3 quarts holds a lot so you have that choice of sizing up or sizing down. Don't let the price turn you away. You will have this one a very long time and won't have to ever replace it.

The Norpro Stainless Universal Double Boiler insert is exactly what I needed. I did need a larger stock pot to set the insert into, but that was no problem as I had one on hand.The only downside I saw to the item after I recieved it, and I do admit I kind of had a feeling it would be the case when I was ordering it, but I wish that the handle had been rivited into the bowl.One thing I wish sellers would do is show better close-ups of areas like where to components come together to show how the are attached- rivited, welded, fasteners, etc.The reason I was buying a new double boiler, was because the set that I had before ALSO had the handle in what appears to be a 'metal press' way of attaching it to the bowl.This is not real practical in that when a person is cooking in the bowl, its gonna get heavy...and over time and washings, the 'joint' that they have holding the bowl and handle becomes weak and one day when you go to lift the bowl out of the lower stock pot, the handle breaks off.I may take my Norpro to a friend of mine and have him put a few tacks of weld on it to help re-enforce it. Other than that, I am very pleased with the product and it will serve me well for many years.
