Made my first meal in my new dutch oven...pork tenderloin with veggies and honey glaze...seared the meat nicely and cooked it along with the veggies for 25 minutes in the oven at 400°...came out great! The pot cleaned up beautifully...there was a little stain left on bottom which came out nicely after applying baking soda paste to it. The blue enamel color looks great!

This is a very sturdy Dutch Oven with a beautiful finish inside and out. I have the blue Santarini and the color is very pretty. I jumped on this Dutch Oven because of the dark interior. I was afraid a white interior would be hard to keep from staining so have hesitated in ordering/ buying one. I really like the size at 6qt and it should meet my needs well. It is heavy but needs to be to retain the heat well while cooking and baking. It came well packaged in the manufactures box. First project will be baking bread. :)
I used this on my Nuwave induction cooktop for frying homemade chicken pieces for dinner. I didn’t use my splatter screen, and the high sides kept most of the oil splatters inside the pot. I cooked 2 pieces at a time to minimize the oil temperature drop as recommended by the recipe. Cleanup was really easy, and all the oil residue came out.The top edge of the pot feels a little rough on my fingers. The thin ridge on the inside of the lid, where it touches the pot, also feels a little rough. Based on product description, I expected both surfaces to be smooth. I will monitor for rust, so I have deducted 1 star. I am appreciative that they included the thin pad to use between the lid and pot during storage.FYI:I cooked around 3.5 pounds of chicken that night, that I then breaded. Oil reached 350 degrees in around 10-15 minutes. The first 2-3 batches it only took 5 minutes to bring the temperature back up. (Cooking about 2 minutes on each side). With each additional batch the heating time increased. I cooked 16 palm size pieces, followed by leftover small pieces that were trimmed from the larger pieces. Around 2 hours later when I finally finished, it was 20 minutes between batches for the oil to heat.Since I have never deep fried that much chicken I don’t know if that was normal. Maybe I needed to add more oil? Maybe the breading that fell off the chicken during the cooking process slowed it down? So, maybe I should have filtered the oil half way through? Or did the pot struggle to maintain its residual heat? Or was it my cooking surface? I don’t know. What I do know, is next time I will stick to just over one pound of chicken so that it doesn’t take all evening to cook 3 meals for 6 people. (The family eats leftovers, and they love chicken sandwiches from fast food places, but kept commenting on how mine was way better).
