My “go-to” small fry pan
Carbon steel pans are such good things, much more forgiving, lighter weight, easier to clean than cast iron. Holds tge heat well too. The handle is ever so slightly wobbly because of the conversion mechanism but so far it works well. We like the small size too since we no longer cook for a family. It’s non-stick so got to get rid of the Teflon pans, & got rid of the stainless steel pan too even though it had 40 years of seasoning but the bottom was never flat (kind of rocked on the burner) as so many fry pans are these days. Hope we never have to replace it.

Love it right out of the box
I have been eyeing a carbon steel pans for a while. I thought this would great for camping. The handle comes off for easy storage, and the camper stove is small, so I take the handle off when cooking and the use the handle to remove the pan from stovetop to serve. I can stack nesting pots on top of pan and handle fits inside the pots. This pan was great for fried potatoes, no sticking, clean up was easy. Best of all I got this when it was on sale.

Good pan but
AS others have stated the handle is sharp. I got a handle cover from Lodge. The cover solved the problem.Pan is worth the money. I especially like the removable handle.

Perfect camping frypan.
Lighter than cast iron. Comes seasoned. Easy cleanup with a paper towel. I don't get the complaints about the handle being wobbly and sharp. I found neither to be true. I'm not using the pan to chop wood, so I don't expect the handle will disengage from the pan. Seems nowhere close to that. I'm going to buy the larger size when it goes on sale. Eggs slide around with minimal encouragement!

Great pan but handle worries me.
The pan seem great. The steel is thinner than my other pans designed to be used in a home kitchen. It works fine, non stick, very nicely seasoned. My biggest problem is with the handle. The attachment mechanism is rather lose and releases by thumbing the latch backwards towards you. This is often the same motion when I retrieve the pan from the stove or to flip, shake while cooking. I worry that one of these times the handle will detach. The handle in fact detaches reliably when I turn the pan over to wash the underside. I now learn to detach first and just wash the pan without the handle. I want to love this. Oxo if you are reading this consider some kind of a locking mechanism on the latch please. Otherwise great job.

Excellent! When I use a pan, I almost never use non-stick coated pans anymore.
Carbon Steel Pans are amazing! It's like the old heirloom cast iron pan without the exessive weight and potential for rust. Pre-seasoned saves you from putting it in the oven at 400 degrees with a cooking oil coating the bottom of the pan and letting the oven cool down. You do, however need to scrub the protective coating for the protective seasoning off before using, or your food will taste like burn beeswax the first time (the coating that protects the seasoned coating is beeswax). I used dish detergent for this, but you are never supposed to use soap on these, and DEFINITELY NEVER EVER SOAK THESE PANS or you will need to strip it and season all over again. Get a rubber stripper for it - it's a weird black block of rubber, strange purchase, but it works like magic! CARBON STEEL PANS RULE! Doesn't matter for the pan itself which brand you choose. OXO is one of my favorite brands, and I love the detachable handle much more than the padded handle. Detachable handle doesn't get hot at all above the point where it detaches from the pan. Pre-seasoned is nice, but pick the brand and design you like the best.

12" carbon steel skillet from OXO, works well!
12" carbon steel skillet from OXO. I bought this because I was looking for a non-stick pan without PFEs and this fit the bill as it is pre-seasoned and smooth, unlike most cast iron pans. It is also lighter than cast iron but is still one of the heavier pans that I have. I've used it maybe a half dozen times cooking mostly eggs and potatoes and it works well with food not sticking to the pan at all, and I expect it will continue to serve me well in the future.The handle by the way is secure when in place, and I havent needed or wanted to detach it, so to me it's just an unneeded feature that does not get in the way.
