Caution Extremely Sharp Knives If That’s What You’re Looking For!
These are Great Paring Knives. I like that they are the German Stainless Steel and that the blade is longer that the Lime Green ones i purchased a couple years ago and I Also Really Like the Longer Handle as it Just Feels a Little Bit More Secure In My Hands and it does have A Slight Enlargement to Stop Your Hand From Sliding Forward And Onto Razor Sharp Blade. They were the Exact Same Price as the Green ones I had previously bought. The reason I liked them was they were so Bright Green that I believe if lost Outside in the Garden I think you may Spot them and I also painted the very end of the Handle with Florescent Orange Paint That Shows Up Like A NEON Light if Shined with A Fluorescent Light like I have.I Would Love To see This Company sellBright Colored Handles. The Red are somewhat bright but they’re are still brighter Reds Or Many Colors so they are visible if Used and Lost Outside. Otherwise they stay sharp nicely. I’d recommend them to someone looking for a reasonably priced sharp knife.

Very Impressive at a Bargain!! Price
These knives are impressive, about half again as thick as a Victorinox paring knife and a 1/4" longer. Out of the box I measured BESS sharpness's in the 160-190 range, same as a brand-new utility knife blade. Considering that factory edges on fine kitchen cutlery typically measure in the 250-300 range fresh out of the box, impressive indeed. The handle seems well shaped, a bit thicker than the equivalent Victorinox or J A Heinkel paring knives. The handle material seems to have a good no slip texture and while time will tell my initial impression are that it will be durable. Terrific for a $1.67 ea.

GARBAGE KNIVES! Not 1 of the 12 were properly sharpened.
I figured I'd give these knives a try since they were so inexpensive. The cost should have been my first warning. The knives are stamped " NO STAIN / German Steel X50CrMov15". I have no way of knowing if the steel truly is German Steel.I have decades of experience sharpening knives. I have tried to properly sharpen several of these paring knives. I have had zero success properly sharpening any of these knives. I own several different brands of paring knives that sharpen with ease. These MATTSTONE HILL paring knives just will not sharpen properly.The greater thickness of the blade, compared to my other paring knives, appears to be part of the reason these knives will not cut easily or smoothly through almonds or vegetables.I absolutely cannot recommend these sub-standard, poor quality paring knives.
