Didn't expect these to work

I really, really thought this was another gimmicky gadget that will ultimately be more trouble than they'd help, but given the low cost, there's not much to lose. I was very surprised that they really work. I've had the best results soaking them in cold water for several minutes before use.For cake, you may still need to shave a little to properly level for more than 2 layers, but by not creating a dome, it means a lot less waste when leveling and a little more rise across the whole layer. For just 2 layers, these might level enough to stack right from the pan.They are also very helpful for bain-marie baking with a springform pan because whatever you use to waterproof your pan (foil or oven-safe bag) can be cinched around the pan with these and still promote cooling the sides.These might be the best $10-15 you can spend for home baking.

I bought these when I made my first wedding cake. Used it on 6" and 9" round pans. My cakes didn't have a huge dome in the center. I still skimmed just a bit off the top so they were completely level. Definitely apply before you fill your pans. They are a little tricky too get tight, but you get used to it.
