Bakes an excellent loaf of baguette I proof my sourdough loaf right in the pan put it in the refrigerator overnight. Heat the oven the next day and throw it in . Bakes to a beautiful golden crust.

Success with First Use!

Baked 3 loaves of a richer egg cardamom bread in this pan with good results. Haven't tried it yet for baguettes but will! The loaves proofed in the pan and then baked. Evenly browned crust. Loaves released easily from Pan (I did use a very light coating of lard on pan). The included couche is cotton canvas, not the more expensive linen that traditional bakers would prefer. The couche is used for proofing loaves but not for baking. I have not yet used the couche nor the lame (sharp tool for cutting the slashes in top of loaf before baking).. I found some helpful You Tube videos on how to use perforated baguette pans such as this; also how to use a couche. Looking forward to trying French baguette loaves next. The pan and other items were shipped in a compact cardboard box that I will keep for storing the pan in my cupboard.
